Everyone eats 🥄 Ep 5: Toffee apple overnight oats 🍎

To make 5 portions

* 350g oats
* 400g Greek yoghurt
* 5 tbsp ground flaxseed
* 3 tbsp chia seeds
* 1 tsp cinnamon
* 4 tbsp maple syrup
* 550–600ml almond milk
* Splash of water
* 75g chopped pecans

Toffee apple topping

* 3 apples, peeled and chopped
* 1 tsp cinnamon
* 3 tbsp maple syrup
* 8 dates, finely chopped

Add the apples, cinnamon and maple syrup to a saucepan and heat until the apples start to soften. Add the chopped dates and cook until you’ve got a gooey but still chunky toffee apple mixture.

Mix the oats, yoghurt, flaxseeds, chia seeds, cinnamon and maple syrup in a large bowl, then add the almond milk and a splash of water until you get the consistency you want. Stir through the chopped pecans.

Layer the oat mixture with the toffee apple topping, pop in the fridge overnight and you’re done!

(If you can’t be bothered to measure, just eyeball it…that’s what I usually do!)
