If you avoid soy, you can make your own lentil tofu and it’s super easy. It’s a 1 to 1 replacement for any recipe that calls for tofu. Instructions for making your own tofu below.

How To Make Red Lentil Tofu:
-take 1 cup of lentils and a teaspoon of salt and put in a blender
-add 3 cups of boiling water
-wait 15 minutes
-blend until smooth
-cook in a saucepan for 2 minutes using a whisk
-when it gets as thick as cheese grits pour it into a mold (any container will do) and cool in the fridge.
