cozy night dinner diaries 🍂🕯️ ep. 01

starting a new series sharing easy, cozy dinners that make staying in feel a little more special 🤎

tonight we’re making creamy boursin chicken orzo! SO easy#, full of flavor, and everything comes together in one baking dish. the perfect comfort meal for a cozy night in 🤤

ingredients:

* 2+ chicken breasts, cubed (I added extra!)
* 1 package Boursin cheese
* 2.5 cups orzo
* 3 cups chicken broth + extra (I used more!)
* ½ jar sun-dried tomatoes
* 1 cup chopped spinach
* 1 tsp garlic powder
* 1 tsp onion powder
* 1 tsp Italian seasoning
* ½ tsp paprika
* olive oil
* salt & pepper
* fresh parmesan cheese

directions:

1. Preheat oven to 400°F.
2. Cube chicken and season with olive oil, salt, pepper, garlic powder, onion powder, paprika, and Italian seasoning.
3. Place Boursin in the center of a 9x13 baking dish. Add chicken, orzo, sun-dried tomatoes, and chicken broth around it.
4. Cover and bake for about 40 minutes, or until the chicken reaches 165°F and the orzo is tender. Add more broth or cooking time if needed.
5. Stir everything together until creamy, then mix in fresh spinach.
6. Top with freshly grated Parmesan and enjoy!

save this for your next cozy night in 🤎
