Since I was having trouble eating breakfast. I decided to make something cute that I can eat everyday 😇

Creamy Mango Oatmeal
Cook ware: @caraway_home 
Ingredients:
3/4 cup brown sugar
2-3 cups (about 12 oz) frozen mango chunks
3 cups non-fat milk (or regular milk)
2 cups protein oatmeal @bobsredmill 
2 cups mango Greek yogurt @zoigreekyogurt 
Seeds from 4 cardamom pods
½ tsp vanilla extract @watkins.1868 

Instructions:
In a large pot over medium-high heat, caramelize the brown sugar until completely melted and lightly amber.
Add the frozen mangoes, cover, and cook for 3 minutes until softened. Stir, then add the milk, cardamom seeds, and vanilla extract. Cover and cook for another 3 minutes.
Stir in the protein oatmeal and cook over medium heat for about 15 minutes, or until the oats reach your desired consistency. If needed, add a little more milk while cooking to loosen the oatmeal.
Remove the pot from the heat and stir in the mango Greek yogurt until smooth and creamy. THATS IT

I been wanting to make this for weeks! I’m so glad I finally got to play around with @stgermaindrinks in baking. It tastes really good!! Presentation I’m not 100% happy with it

Lemon Yogurt Loaf Cake with Elderflower Icing

Ingredients:
1½ cups all-purpose flour @pillsburybaking @pillsbury 
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
2 eggs
½ cup olive oil
¾ cup yogurt
¼ tsp vanilla @watkins.1868
½ tsp lemon extract @watkins.1868 
Zest of 2 lemons
1 cup sugar
Icing:
1¾ cups powdered sugar
4 tbsp St-Germain elderflower liqueur @stgermaindrinks @stgermaintr
1 tsp yuzu
½ lemon, juiced
Baking pan
@wiltoncakes 

Instructions:
Preheat the oven to 350°F.
In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In another bowl, combine the sugar and lemon zest. Massage the zest into the sugar until fragrant.
In a separate bowl, whisk the eggs, olive oil, yogurt, vanilla, and lemon extract.
Add the sugar mixture to the wet ingredients and whisk to combine.
Gradually add the dry ingredients and fold until just combined.
Pour the batter into a parchment-lined loaf pan and tap to release air bubbles.
Bake for 40 to 60 minutes, using a toothpick to check for doneness.
Let cool for about 20 minutes.
For the icing, mix the powdered sugar, elderflower liqueur, yuzu, and lemon juice until smooth.
Pour the icing over the cooled loaf and allow it to set before slicing. Enjoy!

SOUP SEASON IS OFFICIALLY HERE!! This is my meal prep for the next week👨🏾‍🍳

Charro Bean Soup

Cookware: @instantpotofficial 
Knife: @cuisinart 
Ingredients:

1 lb ground turkey
1 packet turkey sausage
1 packet turkey bacon
1½ cups carrots, diced
1½ cups onions, diced
1½ cups celery, diced
½ cup minced garlic
12 Thai chilies, minced
1 tbsp onion powder
1 tbsp garlic powder
2 packets Sazón Goya @goyafoods 
2 tbsp oregano @sadaf_foods 
10 whole cloves
1½ star anise
2 large bay leaves or 4 small bay leaves @sadaf_foods 
1 packet 16-bean soup mix
1 large can crushed tomatoes
2 quarts bone broth @simplynature____ 
1 tbsp black pepper
1 cup cilantro, chopped
Chicken bouillon, to taste @knorr 
Salt, to taste

Instructions:

In a large pan over medium-high heat, cook the ground turkey with the onion powder, garlic powder, 1 packet of Sazón Goya, and oregano. Cook until the turkey is fully cooked, then add the turkey sausage and turkey bacon. Cook everything through, then set aside.
Note: If your Instant Pot is large enough, you can do this directly in the pot. Mine was too small, so I cooked and browned the meat separately.

In the Instant Pot, sauté the carrots, onions, celery, Thai chilies, and garlic until slightly softened. Add the cloves, star anise, and bay leaves, then sauté for another 2–3 minutes to release the aromatics.

Add the cooked meat back into the Instant Pot, followed by the 16-bean mix, crushed tomatoes, bone broth, the second packet of Sazón Goya, and black pepper. Mix everything together.

Cook on High Pressure for 45 minutes. Allow the pressure to release naturally once cooking is complete.

Remove the lid and stir in the chopped cilantro. Season with chicken bouillon and salt to taste, mixing well and adjusting the seasoning as needed.

Serve hot over rice and enjoy.

I’m usually not the biggest fan of rice noodles, but this completely changed my mind. They soaked up all the flavor and turned out so good

✨Singapore Curry Noodles ✨
Ingredients:
2 pounds boneless chicken thighs, cubed
1/2 teaspoon black pepper
1/2 teaspoon turmeric @heb 
1/2 teaspoon curry powder @homiahfoods 
1 teaspoon yellow curry paste
2 teaspoons soy sauce
1 teaspoon fish sauce
1 teaspoon oyster sauce
Salt, to taste Rice noodles
King oyster mushrooms, julienned
Garlic, minced Onion, julienned
Bell pepper, julienned
Carrots, julienned
Green onions, sliced

Sauce:
2 tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon oyster sauce @leekumkeeusa 
2 teaspoons curry paste @homiahfoods 
1 tablespoon curry powder @heb 
1/2 teaspoon turmeric
2 teaspoons sugar

Instructions:
First, julienne all the vegetables: onion, bell pepper, carrots, and mushrooms. Mince the garlic and slice the green onions. Soak the rice noodles in hot water for about five minutes, then drain and set aside.
Marinate the chicken with all the chicken marinade ingredients and let it sit.
Prepare the sauce by mixing all the sauce ingredients together.
In a hot wok, cook the chicken first in a neutral oil until it’s seared and cooked through. Remove the chicken, then sauté the vegetables in the same wok, starting with onion, then garlic, carrots, bell pepper, and mushrooms. Once the vegetables are cooked, add the noodles and the sauce, tossing everything together until evenly coated.
Stir-fry everything for a minute or so until fragrant, then finish with green onions and a sprinkle of MSG.

i’m so used to just putting spices, chilies and everything into a dish. This tasted so good without all of that. I want to make a pork belly version and a mushroom adobo. I think that would be so delicious.

Chicken Adobo
Ingredients:
7 Ibs chicken drumsticks
1 cup soy sauce
1 cup white vinegar
¼ cup spiced coconut vinegar (or substitute with more white vinegar)
20-30 cloves garlic, smashed
4 large yellow onions, sliced
1½ tbsp black pepper
8-10 bay leaves @sadaf_foods 
½ cup brown sugar
Water, as needed

Instructions:
In a large bowl, combine the chicken, soy sauce, both vinegars, smashed garlic, black pepper, bay leaves, and brown sugar. Mix well and marinate for 30 minutes to 2 hours.
Heat a large pot over medium-high heat and sear the chicken until lightly browned. Pour in the reserved marinade, add the sliced onions, and a splash of water. Bring to a boil, then reduce the heat to medium, cover, and cook for 30 minutes, stirring every 15 minutes.
Remove the lid and simmer over medium-high heat until the sauce reduces and thickens to your desired consistency. Serve over steamed rice and enjoy!

Carnitas & Chicharrón Focaccia with Guava Balsamic Reduction

Ingredients:
2⅛ cups warm water
1 tbsp sugar 
1 tbsp extra virgin olive oil
1½ tsp yeast @redstaryeast 
4 cups bread flour @goldmedalflour 
2 tsp salt

Filling & Topping:
2 cups carnitas
1 cup chicharrones
Guava balsamic reduction, as needed
Fresh rosemary sprigs, for topping

Guava Balsamic Reduction:
½ cup balsamic vinegar @starfinefoods 
1 cup guava puree @goyafoods 
¼–⅓ cup brown sugar
3 sprigs rosemary
Pinch of salt

Instructions:

In a large bowl, combine the warm water, sugar, olive oil, and yeast. Mix and let sit for about 8 minutes.
Add the bread flour and salt and mix until a sticky dough forms. Cover and let the dough rest for 20 minutes.

With wet hands, stretch and fold the dough. Cover and let rest for another 20 minutes. Repeat the stretch-and-fold process 2 more times, resting 20 minutes between each round. After the final fold, cover and let the dough rise for about 1 hour, or until noticeably puffy.

While the dough rises, make the guava balsamic reduction. Add the balsamic vinegar, guava, brown sugar, rosemary, and salt to a saucepan. Bring to a simmer and cook until the mixture has reduced and thickened into a thick sauce. Remove the rosemary and set aside to cool.

Grease a baking sheet generously with olive oil and transfer the dough onto it. Gently stretch the dough out. Before tri-folding, add some of the carnitas and guava balsamic sauce over the dough. Tri-fold the dough, then stretch it back out onto the baking sheet. Cover and let it proof for about 40 minutes.

Preheat the oven to 425°F. Once the dough has finished proofing, add more carnitas, chicharrones, and guava balsamic sauce over the top. Add a couple of fresh rosemary sprigs, then drizzle with olive oil and gently dimple the dough.

Bake at 425°F for 22–24 minutes, or until golden brown and cooked through.
