Trying out some variations of this smoked eel terrine for my dinner with @thenudgelondon in a couple weeks. Here with some savoy and asparagus and wrapped up in a lardo blanket. For mains, I’ll be doing some incredible @cornwallfishdirectltd John Dory with sweetbreads and cod’s roe. A few days ago, I turned 30 and, in existential crisis, had a little look back over my 20s and what- if anything- I had achieved. A day later it came to our attention that we’ve been recognised in the Michelin Guide. Everyone at Rake should be intensely proud of this, it’s a marker of if nothing else very hard work, and very good quality. Everyone at Compton too, as one plate washes the other.
