If you grew up waking up to your mom making huevos rancheros… you already know nothing compares ❤️
Crispy tostada, creamy beans, a runny egg, and that homemade salsa that brings it all together 😮‍🔥
Simple, comforting, and full of memories… just like home.

Ingredients:

* 3 tomatoes
* 1–2 jalapeños (depending on spice level)
* 3-4 Chile de Arbol
* 2 garlic cloves
* ⅓ white onion (plus extra sliced purple onion)
* ⅓ cup water
* Salt (to taste)
* 1–2 tsp tomato chicken bouillon
* Pinch of cilantro
* 2 eggs
* Pinto beans (cooked)
* Tostadas
* Avocado (for topping)
* Queso fresco (for topping)
* Oil (for cooking)

Instructions:

1. Blister the veggies:
On a cast-iron skillet, roast the tomatoes, jalapeños, garlic, and onion until charred and softened.
2. Make the salsa:
Add everything to a blender with water, salt, bouillon, and cilantro. Blend until smooth.
3. Cook the eggs:
In a pan on low heat, cook eggs sunny side up. Set aside.
4. Simmer the salsa:
Pour the salsa into a pan, add sliced purple onion, and let it simmer for a few minutes.
5. Mash the beans:
Warm up your pinto beans and mash until creamy.
6. Assemble:
Spread beans on a tostada, add your egg, and spoon that warm salsa over the top.
7. Finish:
Top with avocado and queso fresco.

🔥 Nashville Hot Chicken Sandwich (20 Minutes)

🛒 Ingredients
• 2 chicken breasts (sliced thin, then cut into squares)
• 1–2 tbsp olive oil
• 2–3 tbsp Nashville hot seasoning (adjust to spice level)
• 4 slices pepper jack cheese
• 4 sandwich buns
• Pickles (sliced)

For the sauce:
• ½ cup mayonnaise
• 1 tbsp Nashville hot seasoning
• 1–2 tbsp pickle juice

Optional (but 🔥):
• 1–2 tsp brown sugar (for that slight sweet heat balance)

👩‍🍳 Instructions
1. Prep the chicken
Slice chicken breasts in half, then cut into bite-sized squares. Toss with olive oil and Nashville hot seasoning until fully coated.
2. Make the sauce
In a bowl, mix mayo, Nashville seasoning, and pickle juice. Set aside.
3. Cook the chicken
Heat a pan over medium-high and cook chicken until browned and cooked through (about 6–8 minutes).
Optional: Sprinkle a little brown sugar at the end for that caramelized, slightly sweet heat.
4. Add cheese
Place pepper jack slices over the hot chicken and let melt.
5. Toast the buns
Warm buns in a skillet until golden.
6. Assemble
Spread sauce on both sides of the bun, add cheesy chicken, top with pickles, and drizzle extra sauce.
