HAPPY BIRTHDAY MONTH to all of my fellow September Virgos! 🧁And if you’re making a birthday cake for yourself or a loved one, use this delicious, creamy Swiss Meringue Buttercream recipe:
Ingredients:
* 5 large egg whites, room temperature
* 1½ cups (300 g) granulated sugar
* Pinch kosher salt
* 2 cups (452 g / 4 sticks) unsalted butter, room temperature
* 1 tsp vanilla bean paste

1. Whisk egg whites, sugar & salt in a bowl over simmering water until smooth and 160°F.
2. Using a stand mixer, whip the egg white mixture until glossy stiff peaks form and the bowl is cool.
3. Switch to the paddle attachment and continue to mix on low while adding softened butter 1 Tbsp at a time.
4. Once all butter is incorporated, continue to mix on medium until silky smooth. Be patient, this can take about 10 - 15 minutes.
5. Add vanilla bean paste and mix to combine.

Tip: If it looks curdled or soupy, keep mixing — SMBC often comes back together.
