What a night to remember! ✨
Tony was kind enough to host our private event at his stunning home and wined and dined us to absolute perfection. With a specially curated birthday menu and impeccable wine pairings, we were truly spoiled from start to finish.

Stand-out dishes for me were the ragu of wood urchin pasta and the murgh malai tikka — but honestly, everything was sensational. 🍝🍗

A huge thank you to my 🏴󠁧󠁢󠁳󠁣󠁴󠁿 family and to my amazing PA for organising such a special evening — a year in the making! 🥂

I’m so grateful for the generous gifts and even more so for the laughter and love shared with those closest to me. It was a night for the memory bank. 💫

This week’s theme was plums and damsons for @sundayafternoonbakingclub and I went for something a little more grown-up.

A plum & Limoncello frangipane tart — buttery shortcrust pastry, lemony almond frangipane and little pockets of juicy plum, finished with toasted almonds and a dusting of icing sugar. 🍋💜

Sweet, sharp, creamy and just a little bit boozy…fab little recipe adapted from @goodfoodeveryday

For this week’s @sundayafternoonbakingclub cream theme I went for a little twist on a classic — carrot cake cheesecake, topped with a generous layer of whipped sweet cream and finished with a scattering of chopped nuts. 🥕🍰

Spiced carrot cake underneath, creamy cheesecake in the middle and light, fluffy cream on top… basically all my favourite things in one cake! Creamy-tastic! 😂

Saw @janespatisserie making this last week, thought it was perfect for the theme so go check out her fab recipe!

Can’t believe I’ve done a whistle stop weekend to Liverpool and back and made it back in time to finish off this bake 😮‍💨

My submission for this weeks @sundayafternoonbakingclub blackberry theme 🖤🫐 is a chocolate fudge cake layered with blackberry ricotta cream, topped with a rich, glossy chocolate ganache. Finished with fresh blackberries, cacao nibs and a little touch of mint 🌿

The original recipe is based around the wonderful @bakedbybenji — definitely worth checking out!

This week’s @sundayafternoonbakingclub challenge was all about chilli, so I took inspiration from one of my favourite desserts and gave it a subtle spicy twist.

I made @ravneeteats miso caramel, chocolate & bran flake tart, adding a touch of chilli to the chocolate ganache. Just enough to bring warmth, alongside the rich chocolate and salty-sweet miso caramel.

The crunchy bran flake crust is a perfect pairing with the chocolate ganache.

We all need a bit of ‘hot stuff’ now and again 😉🌶️🍫 oooh spicy 😂

This week’s bake for @sundayafternoonbakingclub took us to Brazil 🇧🇷

I made a Brigadeiro cake, inspired by Brazil’s much loved chocolate truffle, brigadeiro, which is a staple at birthdays and celebrations. Rich chocolate sponge, layered and covered in silky dark chocolate frosting, then finished with chocolate sprinkles and topped with brigadeiros.

I somehow managed to cover the whole thing in sprinkles without wearing half of them myself, whilst dancing along to MJ songs after watching the biopic yesterday 😅 💃🏻

Chocolate overload? Absolutely. Worth it? 100%. 🍫

This week’s ‘challenge’ bake for @sundayafternoonbakingclub … a 6-strand sweet brioche loaf ✨🍞

I set myself the extra challenge of getting the plaiting pattern right before the dough had its final prove — which sounds simple until you’re working with soft, bouncy brioche that has a mind of its own! 😅 @challahprince plaiting techniques really helped.

Pleased with how the structure held and that golden finish with the pearl sugar sparkle at the end 🤍 Used the fab demi-brioche recipe from @goodfoodeveryday which is also perfect for doughnuts 🍩

This week’s @sundayafternoonbakingclub ‘Classic’ theme bake is a carrot cake with a tropical glow-up ☀️🌴
A Caribbean carrot cake packed with pineapple, coconut and warm spice and of course carrots and walnuts.

Cream cheese and vanilla frosting, toasted coconut, with some extra chopped walnuts on top.

This week’s bake for the @sundayafternoonbakingclub is the “viral” theme… so I did some focaccia art using the recipe from Puff School of Pastry. You all remember how that went viral over lockdown! @ravneeteats & @nicolaalamb had us engrossed!

Incredibly light, beautifully airy and that golden, crisp crust comes from the method of using a poolish and plenty of good olive oil.

Did some foccacia art using rosemary, olives, peppers and red onions bringing a bit of colour and flavour to the top 🌿🫒 finished with a generous sprinkle of @maldonsalt flakes.

This week’s @sundayafternoonbakingclub theme was flowers, so naturally I went with pistachio & rose 🌹

Soft, nutty sponge spiked with pistachio cream and layered with rose cream cheese frosting, finished with chopped pistachios and dried rose petals.

Delicate, fragrant, and quietly dramatic 😉😂✨

For this week’s poached theme with @sundayafternoonbakingclub ✨ I’ve made a cinnamon sugar panna cotta, delicately topped with star anise and cinnamon poached mangoes 🍮🥭

Soft, creamy, gently spiced — a dessert that’s all about balance, warmth - especially with this weather!

For this week’s @sundayafternoonbakingclub ‘cheese’ theme, I’ve made a Burnt Basque Salted Caramel Cheesecake — finished with a thick drizzle of salted caramel and a crunchy pistachio topping.

Dark, caramelised edges, molten centre, check out the wobble it’s dreamy!
