Here’s my weeknight One-Pot Homemade Cheesy Beef & Macaroni Skillet recipe, one my family requests all the time! It’s like Hamburger Helper, but homemade.
I make it all in the Le Creucet, so cleanup is a breeze. You can easily halve the recipe if you’re feeding fewer people, or freeze half for another easy meal later. I use tomato sauce and paste from the garden, but canned works great too. Make it your own with whatever you have on hand! This easily feeds our family of 6 with leftovers for lunch the next day. Enjoy and tell me if you make it! ⏲️

One-Pot Cheesy Beef & Macaroni Skillet

INGREDIENTS
• 1 large or two small onions, diced
• 2 lbs ground beef
• 1 tsp salt
• 1 tsp black pepper
• 1/2 tsp cayenne pepper (adjust to taste)
• 2 tsp paprika (can use smoked if you prefer)
• 2 tsp Worcestershire sauce
• 2 tsp oregano
• 2 tsp onion powder
• 1 tsp garlic powder
• 2 tbsp minced garlic (trust me)
• 1 (6 oz) can tomato paste
• (1) 16 oz package of macaroni style pasta
• 6 cups beef broth
• 16 oz tomato sauce
• 4 cups shredded cheese (Cheddar, Colby jack, etc)
• 1/3 cup whole milk
• 1/3 cup cream cheese

⸻

INSTRUCTIONS
1. Heat a very large skillet or Dutch oven over medium-high heat.
2. Brown the ground beef with the chopped onions until fully cooked. Drain excess grease if needed.
3. Season with salt, pepper, Worcestershire sauce, paprika, oregano, onion powder, garlic powder, and cayenne.
4. Add minced garlic and cook for about 30 seconds until fragrant. Add the tomato paste and cook for 1-2 minutes to deepen the flavor.
5. Stir in the uncooked pasta, beef broth, and tomato sauce.
6. Bring to a quick boil, then reduce heat to low. Cover and simmer for 15-20 minutes, stirring occasionally to prevent sticking, until pasta is tender. Remove lid if liquid needs to cook off after pasta is cooked.
7. Once pasta is cooked, stir in the shredded cheese and cream cheese until creamy and smooth.
8. Serve hot and enjoy with a dollop of sour cream! by @janamfrancis

Had a blast celebrating this super stud’s 24th yesterday. He’s lived about 45 minutes north of us for a few years now to be close to his work which he loves at Spacestation. We cherish every second we get to hang out with this dude. Happy Birthday Brandon, we are so proud of you! by @janamfrancis
