Baked Chicken Roasted Potatoes & Mac & Cheese
Step By Step:

🍁🍗 MAPLE DIJON HERB CHICKEN & ROASTED POTATOES 🥔🤎

This chicken sat in a maple-Dijon marinade with rosemary, garlic, and thyme, so every bite was sweet, savory, garlicky, and full of herby flavor.

SERVES: 2

WHAT I USED MARINADE:

🍗 2 chicken leg quarters
1 bag of mini potatoes & I cut them in half
2 TBSP OF OLIVE OIL
🍁 2 tablespoons maple syrup
🌿 2 tablespoons Dijon mustard
🌿 1 tablespoon fresh rosemary, finely chopped
🧄 2 garlic cloves, minced
🌿 1 1/2 teaspoons fresh thyme leaves
🧂 1/2 teaspoon salt
🖤 1/2 teaspoon black pepper
🧄 1 teaspoon garlic powder
🧅 1 teaspoon onion powder
🌶️ 1 teaspoon paprika
✨ 1 teaspoon all-purpose seasoning

THE MARINADE 🍁🌿

I mixed the Dijon mustard, maple syrup, olive oil , fresh rosemary, fresh thyme, garlic, garlic powder, onion powder, paprika, salt, black pepper, and all-purpose seasoning.

Coat the chicken well and marinate it in the refrigerator for at least 2hours, or overnight for the best flavor. Before baking, let the chicken sit at room temperature for about 20 minutes.

For the Potatoes use the same seasonings- Minus the Dijon Mustard & the Maple Syrup .

HOW I MADE IT

1. Preheat the oven to 425°F.
2. Pat the chicken dry and season it ( salt & black pepper! )
3. Coat the chicken generously with the maple-Dijon herb marinade.
4. Cut the potatoes into chunks, season them, and toss them with olive oil.
5. Arrange the potatoes around the chicken in a baking dish.
6. Bake uncovered at 425°F for 35-45minutes, depending on the size of the chicken.
7. Flip or stir the potatoes halfway through so they brown evenly 20mins in ) .
8. Cook until the chicken reaches 165°F internally and the skin is browned.
9. Let everything rest for a few minutes before serving.

The potatoes picked up all those maple-Dijon, herb, and buttery chicken juices, which honestly made the whole dish.

IF YOU WANNA IMPRESS SOMEONE MAKE THIS CHICKEN!!!

This one is definitely going back on the dinner rotation.

April-May Dump.
From late nights in the kitchen to sweet moments shared at every event, this journey has been nothing but gratitude and growth. 🧁✨

Feeling so supported by my family and friends over these past few years, I’ve stayed locked in, grounded, and genuinely enjoying life. Now settled in DC, watching my baking business bloom even more feels surreal in the best way.

Forever grateful for every big celebration, every small gathering, and every person I’ve met along the way who’s trusted me to be part of their moments.

Here’s to more success, more sweetness, and an unforgettable start to summer. June, be good to me. ☀️💛
