@chefdustinfalcon inspired tomato dish - peeled cherry tomatoes dressed in a reduced tomato water dressing, charred pepper purée, gazpacho foam, tomato powder.

Roast chicken with fennel and smoked paprika, squash purée, green bean and corn succotash, chicken jus.

Corn creme brûlée.

Dumpling day from a week or so ago. Every few months we spend two or three hours putting together dumplings for the freezer. Fatty pork shoulder is coarsely ground, combined with aromatics and seasonings, and then folded into home made wrappers. We store them in the freezer for quick lunches or snacks for a few months. All they need is a pan fry or a steam, then some chili crisp and black vinegar.

Birthday lunch for @sam0104g

Sous vide Denver steak with a Thai herb salad.

Grilled sourdough with burrata, prosciutto chili crisp, honey, and black vinegar.

Eggplant and pickled chilies with a black garlic tahini sauce.

Leeks braised in a massaman curry sauce, crispy leeks, and peanuts.

Overall a really cohesive delicious meal. Glad I could make it for someone so special!

Quick three course for two on New Year’s Eve to round out 2025.

Salmon carpaccio, yuzu ponzu, gochujang mayo, nori, scallion.

@birdshillwagyu rib cap with bulgogi flavors sous vide, finished on the grill, grilled scallion, carrot ginger purée, wok-fired yu choy.

Ramen Pop-Up Alert!

This Thursday, October 23rd, I’ll be serving up hot bowls of tori chintan shoyu ramen out of the @snackville.nb kitchen inside @bagtownbrewing - part of @umami_matsuri_2025 , an exploration of the fundamental flavours of Japanese cuisine. After diving into the fundamentals on the 22nd, come taste them in action on the 23rd.

What’s on the menu:
 A clear and rich chicken broth ramen seasoned with soy sauce, topped with all the good stuff. $15 a bowl, dine in or take out. Maybe grab a cold pint of Wobbly Duck to wash it down?

Starts at 5PM and I’m cooking until sold out.

Field Trip: @thestillwellfreehouse

Eccentric brightly lit dining spaces, incredible selection of beer-appropriate food, and an expansive menu of craft beverages including draft, cask conditioned, and canned beers from local and beyond!

The clams with coconut and chorizo broth along with the corn ribs were great - Loved the little touch of heat in pretty much every dish, great reach.
