🥕 THE MOISTEST CARROT CAKE WITH VANILLA CREAM CHEESE ICING 🤍

A classic carrot cake with grated apple for extra moisture, warm spices, crunchy walnuts and the most delicious vanilla cream cheese icing. Finished with extra Fresh Life Walnut Pieces and pumpkin seeds for that yummy little crunch on top! 🍰

I love that Fresh Life have walnut pieces ready to go because it saves you that extra step of chopping your nuts — one less thing to do when you’re baking!

✨ CARROT CAKE INGREDIENTS

2 cups (250g) plain flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2½ tsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground ginger
1 cup (200g) white sugar
1 cup (200g) brown sugar
1 cup (240ml) vegetable or canola oil
4 large eggs
2 tsp vanilla extract
2 cups (about 250g) freshly grated carrot
1 large apple, peeled and coarsely grated
1 cup Fresh Life Walnut Pieces
🤍 VANILLA CREAM CHEESE ICING

225g cream cheese, softened
115g butter, softened
3–4 cups (375–500g) icing sugar, sifted
