Soup season… but make it south Indian curry style… and then pour it over rice. Pulling a bag of frozen mixed vegetables out of your freezer makes this even easier. So fun to share this recipe. My aunt taught me when I was in college – the first dish I ever made from scratch honoring my heritage. Do you prefer your curry dishes with coconut milk?

NY Times!!! 🥹
Madakasan literally means folded thing. These are thin crêpe-like pancakes which are stuffed with fresh grated coconut that’s been sweetened with sugar. My parents would always use white sugar, but if you like jaggery and a molasses-like flavor, totally go for it. We did not make multi-colored Madakasan , but where it probably originated, Goa, there seems to be this tradition before lent begins.

So honored to have a childhood favorite from Kerala culture in a national newspaper. And always amazed at the opportunities God gives me. What is my life?.

Make a quick noodle or elevate it with extras for a restaurant quality meal. These sweet chili noodles are made even better with velveted beef. Thinly sliced green onions would have been great and even some sautéed bell peppers. Personalize it and make the way you love it.

Do you prefer rice or noodles?

Chuck roast beef thinly sliced works great.
1/2 lb beef
1/2 tsp baking soda
1/8 C water

After 1-2 hrs, rinse until it runs clear

Squeeze out the water

Marinate the way you like.
I used 1 teaspoon of Shaoxing wine, 1 teaspoon of oyster sauce, and 1 teaspoon of cornstarch.

Marinade for 30 minutes to 1 hr.

Heat and very hot. Quickly stirfry vegetables like onions, bell peppers, sugar snap peas

Brussels sprouts are always a good idea to add fiber and bulk up your meal

Boil 6 cups of water then add noodles to cook for five minutes

Add noodles to a bowl with your cooked vegetables

Add the sauce

Add the spices

Be careful when you’re cooking and videotaping🤪

use the oil from the chili crisp for seasoning and stir frying

add beef and lay in a single layer to avoid steaming

Cook till Browned

Mix it all together

This was so delicious!
