Today on The Angel, @jfeldmar and I have a big-time collab, our first-ever bicoastal feature: a deep dive into the whole grains revolution, sparked by @tehachapigrainproject in L.A. and now being driven forward by @brooklyngranaryandmill, which opened on the Gowanus Canal last year. We’ve spent the last two months eating through our respective cities—from seasonal veg-topped pizzas to jammy fruit tarts—and talking to the farmers, millers, bakers, and chefs reshaping the way we cook and bake with grain. We’ve highlighted a dozen dishes on each coast, eight of which are illustrated here by the brilliant @zoeing737. I don’t know anyone else like Naomi. Unlike some chef/co-author relationships, which are manufactured by agents or managers, ours developed organically, while waiting in line for the bathroom at a party in Brooklyn (fertile breeding ground for many great friendships). 

We were friends for years before deciding to work together—both of us new to cookbooks, with very little knowledge of how that opaque corner of the industry worked. We figured it out together, in late-night phone calls and hotel room lock-ins and road trips to the Oregon coast, Post-Its flying everywhere, both of us high off that rarest of drugs: complete creative connectivity. Naomi had so much to say—her vision was clear from the start, which was, more or less, always the case. 

Being a co-author is a funny thing— you become part employee, part boss, part therapist, part babysitter, part bad cop, part confidant. You are responsible for capturing another person’s voice, in their own words, but better. It’s a trust fall on the page. Working with Naomi was never just about ā€œworkingā€ā€” it was an intense, profound, exhilarating, and at times, challenging collaboration, which I think she would take as a compliment. 

Naomi compared making our book to having a baby together. It’s true that we became family. Taste & Technique came out in 2016, but we saw each other often, including just this past March, when I crashed her romantic weekend on the coast with Kyle, the moon to her sun. He brought the records (and the full-sized speakers, obviously); she brought a big steak and the last jar of her raspberry preserves. We all walked along the cold, windy beach and I thought about the different eras we had seen each other through, how rare it is to stay close through so many seasons. 

I have so much more to say, about her confidence and her convictions, about her grace in the face of change, about the orchid she sent me a picture of every year when it bloomed. About prunes and souffles and those glass sculptures in her bathroom. [More in comments] by @jfeldmar
