The start of summer always means one thing in our house—fresh seafood season has arrived. My wild Chilean Sea Bass ceviche is one of my favorite ways to celebrate. Fresh-caught sea bass is marinated with red onion, lemon and lime juice, cilantro, jalapeño, mirasol chiles, tomato juice, and a splash of 7UP—my not-so-secret secret ingredient. Light, bright, and refreshing, it’s the kind of dish that’s best enjoyed on a sunny afternoon with a view of the water.

A quiet bowl with a lot of soul. This Okinawan sōki soba came in a light, clean broth with thick, slightly chewy noodles, topped with tender braised pork ribs that just fall apart, a slice of fish cake, scallions, and a little hit of pickled ginger for contrast. Simple, comforting, and deeply satisfying—one of those dishes that doesn’t try too hard because it doesn’t need to.

I was recently in Costa Rica and every morning I had this, because that is what every Tico does. A typical breakfast includes eggs, Gallo Pinto rice and beans, jambon, tortilla, tomato. Pour a little Linzano sauce on top, and it’s a perfect way to start a day.
