Hello! It’s time for some introductions around here! I’m Julia, Chef/Owner/One Woman Show of JJ HINGS. I’m a Pastry Chef/Ice Cream Maker! I’m passionate about using fresh, responsibly sourced ingredients and making flavour combinations inspired by the tastes I grew up with and the people I love. JJ HINGS is named for Jean and Jackson Hing my 婆婆 (grandmother) and 舅公 (great uncle). Our family has a long tradition of growing and working with the freshest produce. My beautiful logo, designed by the talented @isaacstillart and brought to life by the amazing @bee_brown.indd is a recreation of the logo from my great-grandfathers market garden business (vegetable farming). Je suis Cheffe Pâtissier/Glacier, passionnée par l'utilisation d'ingrédients frais et responsables et par la création de combinaisons de saveurs inspirées par les goûts avec lesquels j'ai grandie et les gens que j'aime. JJ HINGS porte le nom de Jean et Jackson Hing mon 婆婆 (grand-mère) et 舅公 (grand-oncle). Notre famille a une longue tradition de culture de la terre et de travail avec les produits frais. Mon beau logo, conçu par le talentueux @isaacstillart et peint par l’incroyable @bee_brown.indd s’inspire du logo de l'entreprise maraîchère de mes arrière-grands-parents (photo 3) Je suis très fière d'apporter une partie de leur histoire avec moi dans ma propre entreprise. Final boss of our summer dessert/pairing series with @parmigianoreggianoglobal   Parmigiano Reggiano Parfait/Miso Soy Caramel/Sesame Rye Crackers   We’ve spent the better part of 3 months having the privilege of playing around in the kitchen with this epic Italian cheese, so I can finally answer that question you’ve all been wondering, can you have too much of a good thing?   I think I’ve eaten/experimented/cooked with more Parmigiano Reggiano than I’d ever thought possible this summer and in the course of shooting this video I’ve also finished off the wedge so I can confidently say no you cannot. If it’s not on your cheese plate put it there.    But hey maybe your cheese tolerance isn’t as high as mine.    Le boss final de notre série éstivale avec @parmigianoreggianoglobal Parfait au Parmigiano Reggiano / Caramel au miso et au soja / Crackers seigle et sésame Cela fait près de trois mois que j’ai le privilège de m’amuser en cuisine avec cet exceptionnel fromage italien. Je peux donc enfin répondre à la question que vous vous posez tous : peut-on consommer trop de Parmigiano Reggiano ? Je crois bien avoir mangé, expérimenté et cuisiné plus de Parmigiano Reggiano cet été que je ne l’aurais jamais imaginé ; j’ai même terminé la meule entière en tournant cette vidéo. Je peux donc affirmer sans hésiter : non, c’est impossible. S’il ne figure pas encore sur votre plateau de fromages, il est temps de l’y ajouter. Mais bon, peut-être que votre tolérance n’est pas aussi élevée que la mienne. A little Friday pick me up to save you from the rentrée blues. Our lovely friend Valentin @quasi.coldbrew is bringing his nitro cold brew to the shop this Friday from 2pm! We’ve also used some of his delicious “rhumming club” brew to make a special dessert to cool you down. Cold Brew Granita/Coffee Jelly/Salted Cream Parfait/Chocolate Sauce Can’t promise it’ll send you back to the holidays but we can try. See you tomorrow Un petit remontant pour ce vendredi, pour combattre le blues de la rentrée. Notre ami Valentin @quasi.coldbrew installe son Nitro Cold Brew à la boutique ce vendredi dès 14h! On a aussi utilisé son délicieux café “Rhumming Club” pour préparer un dessert spécial pour vous rafraîchir Granité de Cold Brew/ Gelée de café/Parfait à la crème salée/Sauce au chocolat On ne vous promet pas de vous renvoyer en vacances, mais on peut toujours essayer. Sweet Corn, Wild Blueberry Compote, Cornbread One last flavour to cap off this years corn season. First time we’ve managed to get our hands on enough wild blueberries to make an ice cream and it’s only served to drive my corn obsession to greater heights. Whilst nothing can top the spicy corn for me this has to be up there. This week only or maybe next week too if I don’t eat it all first. Maïs Doux, Compote de Myrtilles Sauvages, Pain de Maïs Un dernier parfum pour finir la saison du maïs cette année. C’est la première fois que nous avons suffisamment de myrtilles sauvages pour en faire une glace, et ça ne fait que renforcer mon obsession pour le maïs doux. Même si à mes yeux rien ne détrône le maïs épicé, cette création est définitivement dans mon top 3. Disponible cette semaine seulement — ou peut-être la semaine prochaine aussi, si je ne dévore pas tout avant. by @jjhings

La Maison Christian Drouin, producteur familiale et artisanale de Calvados depuis 3 générations, est très fière de s’associer aux côtés de SUPERFINE et JJ HINGS lors de sa soirée de lancement international du Trou Normand Revival, à Paris le Dimanche 28 Juin. Le Trou Normand c’est quoi ? Tout simplement un monument de la culture gastronomique française, consistant à servir un sorbet de pomme avec un trait de Calvados, au cours d’un repas généreux et gourmand, souvent riche en beurre et en crème. Une collaboration pleine de sens, portée par des valeurs communes. Superfine, lieu hybride parisien, à la croisée du bar à cocktails et du restaurant, où se rencontrent mixologie créative, cuisine réconfortante et ambiance de fin de soirée. Chez JJ Hings, Julia d’origine néo-zélandaise / chinoise, imagine ses glaces et patisseries en s’inspirant de ses deux cultures, avec une attention particulière portée sur les ingrédients locaux, de saison et issus de filières responsables. Lors de cet événement, trois créations seront à découvrir : Une réinterprétation du classique trou normand en sgroppino (et sa version sans alcool), une revisite de l’affogato ou encore un cocktail plus estivale autour de la fraise.
