Sick and tired of being sick and tired. Living on @tradmedicinals Throat Coat tea, crystallized honey from last year’s hive haul from my back yard courtesy of @buddhabeeapiary, and my handy dandy @cuisinart electric kettle. Oh yeah, and soup from the local Chinese hole in the wall. I have to respect them, they don’t have a website or any socials. Now if I can figure out where the lung I coughed up is. #sick #cold by @joannawolfe

There’s still a good reason to make things from scratch. I won a blue ribbon at the NC State fair in the early 90s@for my mother’s Angel Food Cake recipe. Back then I did it all by hand. Now I use a Kitchen Aid to beat the egg whites. But you still have to fold in the flour. A mixer still can’t do that. Save the yolks to make lemon curd - Google “Martha Stewart Lemon Curd” for a good a good recipe. #baking #angelfoodcake #blueribbon #ncstatefair by @joannawolfe

3 days and voila! A new deck. Pressure treated lumber with Hog Wire fencing. You almost don’t even see the Hog Wire, the black coating blends into the landscape providing an almost unobstructed view from inside the pool room to the back yard. Thanks to the amazing crew from @elitexteriorsnc

Time to clean out the vegetable inventory - sweet onions, tomatoes, jalapeño peppers and limes. I love my Fullstar box chopper/grater. What used to take an hour now takes less than 15 minutes, mostly because I deseed the peppers. Faster if you leave the seeds and membrane in/on the jalapeños - but a lot more heat. This week’s menu will feature tostados, huevos rancheros, and a grits bowl or two.

Simple dairy free, probably could be made gluten-free. Only 1/3 cup flour. I went with unsweetened coconut, but plenty sweet.
Wet
3 egg whites room temperature
1 tsp pure vanilla
1 teaspoon pure almond extract
1 rounded teaspoon light corn syrup

Dry:
8 oz coconut flakes/shreds - I used unsweetened
2/3 cup sugar - if using sweetened coconut you can probably scale this back to 1/3 cup
1/3 cup all purpose flour - try King Arthur or Bob’s Red Mill 1:1 gluten free flour if you want GF
1/4 tsp salt

Preheat oven to 325. Line 2 cookie sheets with parchment paper.

In two mixing bowls, separate out, wet ingredients and dry ingredients. Mixed together dry ingredients until all incorporated. Sugar tends to fall to the bottom of the bowl so you’ll want to make sure that things are well blended. Whisk together wet ingredients until foamy. Pour over dry ingredients and fold together, scraping the sides and bottom of the bowl until all the coconut and dry ingredients are wet and hold shape.

The easiest way to portion out is a 2 tablespoon cookie scoop, but if you don’t have that use 2 teaspoons to form small balls and place on cookie sheet. Cover the mounds with either parchment paper or wax paper and use the bottom of a glass to press down onto the cookie sheet. Place an oven for seven minutes, then turn cookie sheets around so things bake evenly. Cook for another seven minutes keep a close eye on things as the sugar can easily burn. Let cool for at least an hour before dipping into chocolate.

Chocolate Dip
8 oz semi sweet or bittersweet chocolate
Half teaspoon coconut oil

In a heavy duty sauce, pan or double boiler place chocolate and slowly heat until melted use a whisk to incorporate coconut oil into chocolate. If you have pieces of chocolate bars that are semi sweet or bittersweet, leftover plain Hershey’s kisses or chocolate chips this is a great way to use up odds and ends. If you have milk chocolate try to balance with darker chocolate 70% or greater.

What’s macaroons are sufficiently cooled dip in chocolate and place back on the parchment paper to cool. Wait until set at least an hour. This is probably the hardest thing about the recipe.
