I love a good ribollita as much as the next guy, but there IS more to this pot-au-feu season. Like this concoction of pumpkin, golden beets, cavolo nero, elephant beans, tons of garlic, half a squeezed bergamot, ancho chili, chicken hearts & livers and slab of pork belly.
