We are all heading to Italy in a couple of days and we made a little warm up lunch to get in the spirt of a family holiday. ❤️🌹
A stuffed breaded artichoke, vine ripe Jersey tomato, fresh mozzarella, xtra virgin olive oil and a nice peace of bread to bring it all together.

CPS is coming tomorrow. Raising boys is very different than raising girls. John Lucas eats everything. He is 6’3’ at 16 years old.
I asked him to leave a few cookies for his sister and he never does. He always eats the whole bag and says that she needs to step up and get a cookie. Today we took a few bites out of his cookie and put it in his lunch bag. We will see how this plays out Should be a fun day. by @johncollura1

John Lucas, in his room telling me he’s studying, but he’s probably playing video games. Sends in the text, can you make me a pizza? I’d like a double do it tonight. OK bubby and this is what happened and it was really good. So crispy! I used my matzo meal pizza crust recipe and we always eat it as a thin crust and today we went a little thicker and he got so crispy. It was crazy good. by @johncollura1

I am 5 days in and auntie Gables, demiglaze is almost done. It looks perfect and smells amazing! I also made Auntie homemade vanilla extract. I made the same for Gram, Gram ! by @johncollura1

Auntie Gables Christmas gift is reducing nicely! The Demi glacé is slowly reducing. We went from 50 gallons to about six right now. We are four days in and I feel like we have another two. I decided to make this a very special demiglaze and I added another 25 pounds of browned bones.That is why you’re seeing some beef tallow, if you know, you know. I call this double DEMI. As you can see, the color is becoming deeper and darker. This is going to be a great Christmas. by @johncollura1

Making the Christmas demiglaze for Grammy and Auntie Gable. I will be rolling through New York with the kids pretty soon and bringing the demiglaze. It is still looking very light. At this point it just came to a boil and I turned it down to low and this house will be a simmering pot of beef by morning. Merry Christmas everybody. by @johncollura1
