I made a Bailey's cheesecake with a Bailey's & chocolate ganache. The recipe didn't call for any salt but this cake could have used a pinch. (I've made two dishes from Irish recipes lately and neither one had salt. Maybe it is just assumed in Irish cooking, who knows?) Good flavor, not great, but excellent texture. Just me spinning up a couple of loaves of Guinness brown bread made with treacle and oats. I had this a LOT when we were in Ireland and this is my first try making it at home. These pints go down pretty easy these days, after 10 days in Ireland. We are having a drink at Knights Bar in Clontarf Castle.

Also, check out the tile mosaic behind the bar here at The Knights Bar. It reflects The Battle of Clontarf where the local High King Brian Boru defeated Viking invaders but then was murdered by retreating Vikings while praying in his tent.

What a world.
