I was excited to try the Chilean empanada, but I do admit the baked hard boiled egg was not my most favourite. But I was most impressed with the dough that truly serves as the perfect canvas for literally any filling (except for hard boiled eggs!) 👌🏼 by @joyride.co

Back in May I made a green lasagna with
a egg pasta sheets and brown butter béchamel blended with green veggies 🌱

These were layered with sautéed kale, spinach, zucchini, asparagus, basil, garlic, and homemade mascarpone 🌱

I chose to not quickly boil the noodles which resulted in a crispy cracker crust on the ends. Next time I would cook the noodles for 2 minutes to provide a better chew 🌱

This was a luxurious spring lasagna, and as we close in on autumn, I would love to include squash in those delicate layers 🧡 by @joyride.co
