Yesterday was my last shift at Comstock Saloon. I had an amazing two years and have made amazing friends for life in that building. I am incredibly proud of my team including @josafat_bg and @novelant who have been the best mentees I’ve ever had. I am so incredibly proud to have you both by my side and to call you friends. When I first started as a Chef, I thought that the only way of being successful was working the longest, creating the most, and being the hardest working person in the room. Though these tactics motivated me to progress, I’m starting to appreciate the ebbs and flows of doing what satisfies my interest. I only create when it’s on my terms and when something peaks my interest. Having boundaries and understanding my depreciating returns allows for more energy to soak up my surroundings.

My book: Keto Like A Chef is taking up a majority of my time and writing is soaking up much of my daily creativity. I am happy to say that this will be worth it, even though I don’t have the energy to deep dive into new techniques. I’m really proud of what we are creating. If you haven’t tried keto, this book will be a resource to show you how to do it with style.
