Today’s reminder: Shan Broast Masala has range. @jvcooked makes crispy chicken tucked into pillowy-soft bao buns for World Cup season.Broast Bao bunsBao Dough (5–6 buns)- 250 g all-purpose flour- 20 g sugar- 3.5 g instant yeast (½ packet)- 4 g salt- 5 g baking powder- 10 g neutral oil- 140 g cold milk + water (half and half)Chicken- 350 g boneless chicken- 1/3 packet Shan Chicken Broast masala - 1 tsp ginger garlic paste- ¼ tsp Shan Tikka masala- 1 tbsp mustard sauce- ⁠1/3 packet to coat the chicken afterwardsSauce- ½ cup mayo- 1–2 tbsp sriracha- 1 tbsp sweet Thai chilli sauce- ⁠2 cloves garlic, grated- ½ tsp rice vinegarMethod1. Marinate chicken with all its ingredients, 30 min.2. Whisk all ingredients till a shaggy dough forms then knead 8–10 min until smooth. Rise covered 1 hour until doubled.3. Divide into 5–6 pieces, roll into ovals, sprinkle some flour, fold over parchment squares. Second rise 20–30 min until puffy.4. Steam 10 min over medium heat, then rest 3–5 min with lid on before opening.5. Stir all sauce ingredients together; adjust heat/sweetness to taste.6. Right before frying, coat the marinated chicken with more Shan’s Chicken Broast masala and deep fry chicken over medium-high until cooked through and crisp (4-5 mins).7. Assemble: sauce, chicken, then pickled cucumbers. by @jvcooked
