Welcome back to another episode of Cooking With Friends. This time I’m in the kitchen with my friend @kaewhalen . With summer officially underway, it felt like the perfect time to talk about one of the most misunderstood parts of hosting: wine pairing.

Wine and food have always evolved alongside one another. In many of the world’s great food cultures, pairing wasn’t a formal practice at all. People simply drank the wines produced near the foods they were eating, and over time those combinations became traditions. Somewhere along the way, wine pairing developed a reputation for being complicated, but Kae reminded me that it can actually be one of the easiest and most enjoyable parts of building a menu.

The secret is paying attention to balance rather than rules. Acidity brightens rich foods. Salt can make a wine sing. Texture matters just as much as flavor. Once you understand a few simple principles, hosting starts to feel a lot more intuitive and a lot less intimidating.

Kae has been behind the beverage programming for so many of my events over the years, but this was actually our first time cooking together. It was so fun to step away from work for an afternoon and enjoy the kind of gathering we’re usually creating for other people. We finally introduced our dogs, opened a few great bottles, and spent the day doing what we both love most. Honestly, I can’t think of a better way to kick off summer.
