We couldn’t be prouder of our Chef de Cuisine, Kalyan Chakraborty @kalyanc_10 on being named a Top 10 Regional Finalist in the S.Pellegrino Young Chef Academy Competition.

Kalyan’s talent, determination and leadership are felt every day in our kitchen. He brings curiosity, care and purpose to everything he does, and this achievement is such a wonderful recognition of the chef he is becoming.

His dish, Ontario Rabbit and Everything It Ate for Dinner, is a reflection of his values as a chef. nostalgia, local ingredients, respect for the whole animal, and thoughtful cooking.

This profession let me through so many doors and meet such amazing people but working next to @riadsaifi98 is the most fun I’ve ever had in a kitchen. I’m sad to see the end of this era of us powering through the longest days and endless prep lists together while talking shit but also so excited to see you do something you believe in brother.
Thank you for training me on every single section in this restaurant and sharing your endless wisdom Guruji 😂🙏🏼
