Maple Dijon Sheet Pan Chicken

An easy, flavorful sheet pan dinner with tender chicken, roasted vegetables, and a delicious maple Dijon glaze!

Ingredients

* 1 1/2 lb boneless, skinless chicken thighs
* 1 lb baby potatoes, halved
* 12 oz Brussels sprouts, halved (or broccoli)
* 2 tbsp olive oil
* 2 tbsp Dijon mustard
* 2 tbsp maple syrup
* 1 tbsp apple cider vinegar
* 1 tsp garlic powder
* 1/2 tsp salt
* 1/4 tsp black pepper

Instructions

1. Preheat oven to 425°F and line a large sheet pan.
2. Toss potatoes and Brussels sprouts with 1 tablespoon olive oil, half the salt, and pepper. Roast for 15 minutes.
3. Whisk together the remaining olive oil, Dijon mustard, maple syrup, vinegar, garlic powder, and remaining salt.
4. Add chicken to the pan and brush generously with the maple Dijon mixture.
5. Roast for another 20–25 minutes, or until the chicken reaches an internal temperature of 165°F and the vegetables are tender.

Kati’s Tip

In this video, I switched things up and used butternut squash, broccoli, and delicata squash instead of the potatoes and Brussels sprouts. That’s what I love about this recipe! You can easily improvise with whatever vegetables you have on hand or whatever your family enjoys. Just keep in mind that some vegetables cook faster than others, so adjust your roasting times as needed. Make it your own! by @kati.pederson

🍂 Cozy Meal Inspiration! 🍁

I put together a November recipe calendar featuring some of my favorite recipes from my three e-books! I thought this would be a fun way to share a little meal inspiration for the month ahead. 🧡

I’m going to try my best to make as many of these recipes as possible throughout November so you can see them come to life in my kitchen!

And just a reminder, I will always share my recipes for FREE in my video descriptions! My e-books are simply a convenient way to have all of those recipes organized in one place whenever you need a little inspiration.

I currently have three e-books available for $10 each, and you can find all of them through the Linktree in my bio! 🥰

Save this calendar for those nights when you just don’t know what to make for dinner!

Happy cooking! 🍽️💕 by @kati.pederson

Creamy Pesto Chicken & White Bean Skillet 🍅🌿

This is such an easy, delicious dinner that comes together in about 25 minutes! It’s packed with protein, and you can even use rotisserie chicken to make it quicker!

Ingredients:

* 1 lb boneless, skinless chicken breast, cubed (or shredded rotisserie chicken)
* 1 can cannellini, Great Northern, or black beans, drained and rinsed (use your favorite!)
* 1 cup cherry tomatoes, halved
* 2 cups baby spinach
* ⅓ cup Genova pesto
* ½ cup half & half
* 1 tbsp olive oil
* Salt and pepper, to taste
* Grated Parmesan cheese

Directions:

1. Season chicken with salt and pepper. Heat olive oil in a skillet and cook chicken until golden and cooked through (165°F).
2. Add cherry tomatoes and drained beans. Cook for 3–4 minutes.
3. Reduce heat and stir in pesto and half & half.
4. Add spinach and stir until wilted.
5. Top with Parmesan cheese and enjoy!

Shortcut: If you’re using rotisserie chicken, skip cooking the raw chicken! Just add the shredded chicken with the tomatoes and beans and heat everything through before adding the remaining ingredients.

Kati’s Tip: My kids love this served over white rice, but my husband and I love eating it just the way it is! You can also switch up the beans depending on what you have in your pantry. ❤️
