“Latte art needs time, patience, and the right guidance — and this is what it looks like when all three come together. Every pour is intentional, every swirl earned through practice and passion. This is the craft we teach.

Trust your palate. ☕️🏆

A very happy result from today’s Cup Tasters Competition at @maidenheadcoffeefestival
— 4 correct in 1:41, taking the top spot on the leaderboard.

Three cups. Two the same. One different.

It sounds simple, but under pressure it becomes a test of sensory focus, confidence and decision-making.

Today was a good reminder of something I often talk about in sensory training: sometimes you need to stop searching for more descriptors, trust what you perceive, make the decision and move on.

Huge thank you to Vicky @moneyrowbeans @peaberryandleaf and @maidenheadcoffeefestival team for such a welcoming and brilliantly organised day, and to everyone behind the Cup Tasters competition.

A great day for coffee, sensory and community — and very happy to bring this one home. 🏆

Taste. Decide. Trust your palate.

october 1. happy international coffee day.

to every farmer, roaster and barista who makes the cup possible. here’s to learning it, sharing it and pouring it well.

practice first, understand why.

The more I teach barista skills, the more I realise that learning isn’t always about being shown the “right” way.

The right dose.
The right grind.
The right extraction.
The right milk texture.

These things matter — but understanding often starts when we try something ourselves.

Make an espresso. Taste it.
Change the grind. Taste it again.
Steam the milk. Feel the texture.
Pour it. Look at the result.

Then ask: what changed, and why?

That’s the part of teaching I enjoy most — watching practice turn into understanding.

Make. Taste. Adjust. Repeat.

Maybe becoming a better barista isn’t just about remembering the right steps.

Maybe it’s about becoming more curious about what happens in the cup. ☕️

dark roast doesn’t have more caffeine. it never did.

caffeine barely moves during roasting — strength is dose and ratio, not the colour of the bean.
