This was a big hit at dinner tonight. It was great to have people over again! This is an asparagus gallete with a ricotta, gruyere, lemon, honey and olive oil base. So simple and rustic but amazing!

Kicking off Fall with butternut squash and apple soup. Roasted butternut squash with apples, shallots, yellow bell pepper, lemongrass, ginger, and Thai chilis. Seasoned with maple syrup, harissa, garam masala, s&p, and finished with toasted pepitas with harissa. Freshly broiled toasties with Gruyère and sharp cheddar.

Alaskan Cod roasted in Sungold and Campari tomatoes, Calabrian chilis, confit garlic, shallots, capers, cannellini beans, white wine, chicken stock, lemon juice and lemon zest. Mop it all up with a loaf of crusty bread and this is amazing!

When your neighbor brings over a fresh loaf of sourdough and a fresh peach and a handful of raspberries from their garden… French toast with a peach, raspberry, honey compote! Sooo good!

Using leftovers always brings out the creativity! Ziti with shrimp, corn, Marconi peppers, sungold tomatoes, roasted garlic, shallots, lemon zest, Calabrian chili flakes, pecorino, and fresh basil.
So good!!

Rigatoni with fresh Golden Heirloom tomato sauce, basil, Calabrian pepper flakes, Parmigiano Reggiano, and seared bay scallops with a grilled zucchini side.
