pesto chicken stuffed zucchini boats👩🏻‍🍳

my little twist on @ambitiouskitchen’s recipe!

ingredients:
* Olive oil
* 4 medium zucchini, sliced in half lengthwise
* 2 cups cooked shredded chicken breast
* 3/4 cup pesto (I used @gothamgreens vegan pesto since I’m dairy-free atm!)
* 1/2 cup tomatoes (I used Roma tomatoes but you can use cherry tomatoes too!)
* 1 cup shredded mozzarella cheese
* 1 cup mushrooms
* Optional: 1/4 cup parmesan cheese

Instructions
1. Preheat the oven to 400 degrees F. Grease a 9x13 inch pan with olive oil.
2. Scoop centers from zucchini with a spoon. Place zucchini in the greased pan. Brush or spray zucchini with olive oil and season with salt and pepper. Set aside.
3. In a large bowl, mix shredded chicken, tomatoes, mushrooms, and pesto.
4. Spoon pesto chicken mixture evenly into zucchini boats. Top each with shredded mozzarella cheese (parmesan too if you want!)
5. Cover with foil, and bake for 35 to 45 minutes or until cheese has melted and zucchini is tender.

bon appétit💋
