In Japan, tachigui (立ち食い) restaurants—literally “stand and eat”—have been around since the Edo period (1603–1868), when yatai stalls served soba and skewers to busy townspeople. By the Meiji era (1868–1912), these quick, comforting meals had become a staple near train stations—designed for people in motion, but always made with care.

As Japan led the way (as they so often do), other cultures found their own way to make standing meals meaningful. In Italy, the espresso bar and aperitivo hour shaped a different kind of stand-up dining—fast, intentional, and full of flavor. Whether it’s slurping noodles at a Tokyo counter or sipping wine in a Roman piazza, there’s a shared rhythm here: ritual, not rush.

I teamed up with Chef KEOTA to merge our love of Japanese culture with my Italian roots. Together we created a thoughtful, delicious menu to share with our nearest and dearest—an ode to summer, slurping and sipping.

There’s something beautiful in how both cultures turn standing into savoring.
