Reposted @curryclubldn • Khanh of @kokanfood is one of the many talented women who have linked up with Curry Club to deliver restaurant quality meals to those in need.

Khanh was raised under 6 feet of snow in Montreal on the warm flavours of Vietnamese food.

Two years ago, she quit her job working for an environment NGO in order to turn her passion for cooking into her life's work. After a stint at Thai resto @beggingbowl in Peckham, she headed to Vietnam and made her way into several kitchens in Hội An, including @mangohoian. She currently cooks Japanese-Italian inspired dishes at @angelina.dalston and is a regular volunteer chef at @madeinhackney.

We are grateful to @angelina.dalston for allowing Khanh to use their space to cook for Curry club - the support from restaurants has been invaluable in the delivery of our meals. A little behind the scenes of Khanh cooking this weeks delicious Cà Ri Chay. by @khanhtt

Quechua women from the Chawaytire community near Cusco, Peru (2010).

In a bid to revive the cooking of traditional local food varieties, a cooperative of women set up Papamanka, a sustainable restaurant in the Andean mountains which I visited back then. The women demonstrated such a deep respect for the ingredients and the land on which their food was grown.

“Food waste here is practically nonexistent,” the cooperative’s director, Celia Montalvo Acurio explained to me. “To cut a potato without eating it would be an insult to Pachamama, Mother Earth, and would bring us bad luck.”

Such belief is part of the biocultural heritage of women of the region, much of which is based on a reciprocal relationship between them and their environment. by @khanhtt
