Brunch/ Lunch Snack Perhaps? 

When you want something quick, light, fresh & good. This quick toast recipe is super flavorful & combines my love for kale with cucumbers & tomatoes. 

The crunch from the sourdough bread brings it all together. When you’re making this make sure to soak up some of the moisture from the tomatoes (add salt, & sandwich the tomatoes between a couple of paper towels- salt brings the moisture out of things) so it doesn’t make the kale super water as it lay on top. 

I really love massaged kale with EVOO & seasonings (add in nutritional yeast— trust me), & for the tomatoes & cucumber I quickly drizzled more EVOO, course sea salt, cracked black pepper, but this time I added a LITTLE white vinegar. Incredible. I had a few extra cucumbers & tomatoes so I just added them on the side. This snack can be over salted very easily so try your best to not salt the kale too much that way when everything is combined, it isn’t over powering. I had a few extra cucumbers & tomatoes that I just added on the side Other than that 11/10, highly recommend.

Bearthday photos from my Solar Return 🄹 I turned 33 on 06/06 & spent it at a cute wine bar with some of my fave people (I love yall). Grateful is really an understatement. If y’all have been tapped in with me, yall also know that I gained a new ancestor at the same time; life is so interesting at times. While I’ve had to adjust to a new normal, I’ve also been more expressive, more creative than I’ve ever been, spending more time with the sun, & allowing myself to be seen & witnessed fully. & what a time it has been.

I’ve realized how hard it’s been for me to slow down. I’m so used to constantly being on go, commuting for work, engaging with clients & the public— exchanging energy. A shift was needed to recalibrate, be in my own energy & relax. It’s been a month at my residency & I must say my nervous system has finally relaxed & has allowed me to receive fully.
•
I have new paintings coming which is a big deal for me since these will be my first paintings in 7 years. Painting has always been a love that left too soon before I understood my power & what it feels like rooted in clarity & intention. This is me getting her back. 🄹 I’ve been exploring new concepts, ideas & understanding what true expansion in my artistic practice can look like. Basking in gratitude.

The Ultimate Oyster Mushroom Sandwich

Today on cooking with Kay, we’ll be talking about this mondo monstrous oyster mushroom sandwich I made that looks intimidating but was incredible. When I saw this mushroom at the Asian market, I knew IMMEDIATELY I was going to make a huge sandwich. Lmao.

So very carefully, I washed the mushroom, making sure not to disturb too much of it, as they are very fragile when they are this size. Once cleaned, I went for the batter. Taking a page out of my southern ancestors book, I used yellow mustard as a binder which would give it a tangy, crispy, & savory crust which is what I was going for. I then created a little seasoned wet batter (you see me doing here) to ensure my crust would be thick enough to hold this huge mushroom. Once coated, I then went in with some spelt flour for my dry batter — & then into the frying pan it went.

When I tell you, this sandwich was so tender, crispy, tangy, all of the things. I was impressed. I sliced it in half because…obviously lol 11/10 recommend.

P.S I’m really glad yall enjoy when I share food that I’ve cooked with yall. it brings me joy to share new ways of cooking & thinking about food, especially when it comes to alternatives. I remember when I was younger & would tell my mom that I was hungry & she’d reply ā€œ there’s oodles & noodles in thereā€ 
Me: ā€œI don’t want noodles!!
Her: ā€œWell you must not be that hungry thenā€

& I would proceed—reluctantly to go make the noodles that I didn’t want. I think about that time & how fortunate I am to have had that experience because not only did it strengthen my gratitude later in life, it was my first introduction to creativity when it came to food. So this is a hug to my younger self . 
•
This is for when there isn’t ā€œanything to eatā€ in the house. As yall know, I am a big fan of the Asian market. One of my staple products are these Japanese style ā€œnoodlesā€. They come with udon noodles, little dried vegetables, & seasoning packet. What’s different about my noodles are that they’re never regular. For this dish, I sautéed onions, bokchoy, brussel sprouts & garlic in some avocado oil. I added some miso paste (just a little because it’s salty),as well as some pepper, onion, & garlic powder. Once they are cooked I add boiled water, & drop in some soft organic tofu, & some wakame I’ve hydrated. The rest is simple, just added in the dried veggies & seasoning packet. To top off this bowl, I’ve added some black & white sesame seeds & some toasted sesame oil for a toasted nutty taste. Flavor profile is super savory, borderline creamy as starches from the noodles thicken up the soup. So so so good around this time of year!

Okra— the superfood. 

This is just an appreciation post for okra. Lately, I’ve been finding any & every recipe to put okra in—I have no idea when I started stanning okra like this but I’m glad we are here. Besides being a southern staple, it is high in vitamin A, C, folate, & magnesium.
•
Okra also contains mucilage, which is what usually turns people off from it. It’s what makes Okra & [Aloe Vera] slimy & acts as a natural thickener when added to stew, soups & gumbos. This slimy substance soothes stomach, aids in digestions, & contains anti-inflammatory compounds that ease joint pain. The Vitamin C in okra supports collagen production which is crucial for connective tissue health, skin, etc. It’s a really great food to incorporate in your diet—if you can get past the slime lol. I’m okay with the slime to a certain point, lol I haven’t gotten to where I can drink okra water just yet šŸ™ƒ but that is the goal. 
•
Besides these amazing health benefits, okra holds a special place in my heart as it is deeply intertwined with Black & African culture, survival & resistance. It’s one of about 25 plants that made it over to the Americas as a direct result of the Trans Atlantic slave trade. It was replanted on the plantation & was a food that was familiar to home. This food was nutritious, tasty, & kept us alive. This is the food of my ancestors
