Can’t believe turkey season is coming to a close. Spring beats to a beautiful, yet manic rhythm, with the woods and the waters waking up at once. Inevitably, I try to cram a year’s worth of outdoor pursuits into a couple fleeting months—with turkeys usually taking center stage. I love it, but I know it can’t last forever. Looking back on the miles walked, the lessons learned, and the birds that did and didn’t play the game, I’m already scheming for next year. Ascension Bay, MX ‘26 in the books! Every year I visit, I leave with lessons to pack away for the next trip. We caught plenty of fish, tested how far a 23-foot panga can squeeze into the mangroves, poled miles of pristine flats, and quickly settled into the laid-back rhythm of Punta Allen.The permit, as usual, carried themselves with an infuriating level of indifference. Plenty of shots, plenty of refusals, and the occasional follow - just enough interest to keep searching while willing bonefish and tarpon grow more and more tempting. Sometimes you stay the course. Greek Wild Turkey Skewers 🦃 🗡️ ~There’s a near-universal tendency among turkey hunters to cube or slice wild turkey breast, dredge it in batter, and drop it into hot oil. I won’t argue—it makes a damn fine nugget, tender, or schnitzel. But variety is the spice of life, so this go-around, we’re firing up the grill.These Greek-style skewers have worked their way into my regular spring rotation. Nothing like a mid-fight audit. This bull red was halfway to the boat when the Tax Man showed up to collect his cut. It was the first and last time I’ve seen a red get sharked. Wood Duck Bordelaise with @kirkymarks ~“Every October, I find myself counting the days until early duck season. The river I hunt rarely holds big ducks that time of year, but it reliably fills with woodies. Bordelaise is a classic French sauce built on dry red wine, shallots, and demi-glace. It’s a simple sauce that feels far grander than the effort required to make it. It also happens to pair perfectly with waterfowl. Simply put: if it’s duck season, it’s bordelaise season. While wood ducks are a natural fit for this recipe, it’s hardly limited to them. Before the ice age set in, I climbed aboard a Duck Water Ocean 32 - or as Jeff Coats calls it, “the world’s largest duck boat” - to try my hand at sea duck hunting in the Atlantic.It was a first for me. I’ll admit, I’ve always had a little trepidation about the pursuit; these birds don’t exactly have a five-star culinary rating. But I was glad to learn they’re plenty edible… though I’ve heard they benefit from some bold, strong-flavored accompaniment.I’ve got a few breasts in the freezer now. Thinking curry or jambalaya - something that leans into the fishiness instead of pretending it’s not there.I probably won’t be targeting scoters again anytime soon (barring some unforeseen culinary breakthrough). But I’m grateful for the opportunity and the camaraderie.
