Here are a couple of my current favourite @ballymaloecookeryschool things: simple yet delicious. Pickled beetroot (organic beetroot, sugar, white wine vinegar, water) - bought the beetroot at the Ballymaloe shop as I left from my recent stint teaching there and pickled it as soon as I got home. It’s very hard to resist. And why would you anyway? And then some roasted onions (onions, olive oil, salt and pepper) - if you have a surfeit of onions, as I did from my @riverford veg box, do this!! Io amo l’Italia - it’s always a treat to spend time in Italy. Brilliant weekend in Rome with @waynegarvie, @tesswillmott and a very entertaining bunch of people for celebrations, sightseeing with the brilliant @understandingrome, great food, dancing and a lot of laughing! This Joshua McFadden corn and tomato salad 🥗 was delicious and pretty quick to put together. I had a couple of corn cobs hanging about the place, so it seemed like the obvious thing to do. 🌽 🍅

Joshua says don’t worry about cooking the corn but that you could grill them first. So I mixed it up and did a bit of both. I really liked it both ways, so that’s not very helpful…!! 🤪

It made for a perfect light dinner, with a bit left for lunch too 😋

Just a few pics from my recent foray in Cork where I had the privilege to co-host a group of fellow members from @lesdamesintl 👩‍🍳

What an amazing and inspiring group of women, all in or formerly in, the food, beverage and hospitality industries 🤩

We had a great time, eating at such brilliant places as some brilliant places, finishing our trip with a flourish at @ballymaloe_house 😋

I think this is perhaps my all time favourite sourdough recipe, from the @margotbakery recipe book. It’s called Geronimo. I’m not sure why, although I do feel like making a little leap of joy whenever I bake one of these beauties, so maybe that’s it... I’m not in the same place as the book right now, so I can’t check!

It’s got seeds in; it’s got some of my @ballymaloecookeryschool starter in it and it’s perfect with a generous helping of salty butter. One slice is not enough…

I should also mention that their sourdough pain au raisins is beyond delicious! When there’s a parking space outside the bakery, I take it as a sign that it’s time for breakfast 😋

Bank holiday Sunday - a perfect opportunity to bake some cakes, a classic Victoria sponge and a Swiss roll, both from the @breadaheadbakery British tea time workshop. I gave the Victoria sponge away and shared the Swiss roll with dinner guests. It amused me immensely to finally use up the raspberry jam I made in my first week @ballymaloecookeryschool (it was two days past it’s one year anniversary - I did a taste test before unleashing it and it was still delicious) #baking #ballymaloecookeryschool #breadahead #jam #teattime by @kitchenconfidenceuk

Tomato and cheese bread. 🍅🧀🥖

If you don’t have a sweet tooth then these are a great alternative to cinnamon buns. And yes, you can eat them for breakfast - or any time of day really! 😂

Warm toasted oat, black treacle and beer buns. 🥖🍞🥯😋

These are really delicious served with some pickled cucumbers and smoked salmon but equally as good with a ploughman’s lunch of chutney, pickled onions, apple and celery slices, radishes and your favourite cheese. 🧀🍏
