Their shift starts after the last order goes out.

Many of our installs happen after the kitchen closes for the night, so they don’t stop the kitchen from opening on schedule the next morning. By then, the exhaust fan has demand control kitchen ventilation behind it, running as hard as the cooking calls for and no harder.

The estimate said fan speed could be reduced to 50%. We brought it down to 44%.

At Washington University School of Medicine, Kitchen Energy Solutions added demand control kitchen ventilation to the McDonnell Science kitchen's existing exhaust. A temperature sensor and a blue-light optic sensor read how hard the line is cooking, and the fan speed follows.

Coming in under the projection meant an extra 7,278 kWh saved in a year, about $9,336 in energy savings overall.
