This orange roughy did not turn out beautiful.

My mistake was leaving the fillets too large. They were delicate and too heavy to flip cleanly, even with two fish spatulas.

But it was still delicious. Fresh herbs from the garden, good seasoning, and a little kitchen recovery saved dinner.

That’s part of cooking confidence too. Not every meal has to look perfect to be worth making.

Next time, I’ll cut the fillets smaller before cooking. by @kitchenfindsthatlast

Most roasted potato problems come down to one thing: too much steam.

A hot pan, good contact, and enough space between the potatoes help moisture escape so browning can happen.

Three simple changes. Much crispier potatoes.

Garlic and onions go together beautifully, but they shouldn’t go into your pan at the same time. Onions need to cook longer than garlic. Add the garlic last and cook it 30 to 60 seconds to avoid burning. by @kitchenfindsthatlast
