This article by Caterina Urbano is a great example of London being a city where land is valued first and foremost for the wealth it can generate, rather than continuing to build and support communities. https://open.substack.com/pub/vittles/p/the-rise-and-fall-of-mercato-metropolitano?r=9o447&utm_campaign=post-expanded-share&utm_medium=web by @kitchentablenw6

This is for those of you who are nervous about the idea of making sourdough. Halfway through the ‘folding’. Section of my bread making today, completely forgetting I was in the process of making bread, I went out for an appointment. I then got distracted by going for dinner and got home 4 hours later.

My wildly neglected dough had completely over proved, but it was late and I was being lazy as I wanted to go to bed. I gave it a little fold, left it, came back and shaped it, popped it in the fridge and baked it this morning.

My point is not to be scared of sourdough. It’s hugely forgiving, and will usually reward you with a lovely loaf, regardless of how you mistreat it.
