A wedding commission for Jade and Connor.Vanilla sponge cushioned between layers of peach, lychee and rose preserve and a bay-pimento rice pudding mousse. My very first tiered cake! I enjoyed playing with the form and nodding to the seasons. The hues of pink and green cascading into a bundle of loveliness is so pleasing on the eye. May I continue making whimsical cakes. Shoutout to my friend Mo for designing such a beautiful accompanying sign, and also being allowed to take part in the ceilidh. I felt so much joy! by @kiwi.munched

Bakery processes + very first product development.Eventually I landed on a treacle pudding made with old croissants that got all toasty and nutty in the oven. They were then crushed and enriched with brown butter and lemon zest. Paired with a caramel crème pat and triple berry compote. This went through so many changes, but eventually I got there 🌀 by @kiwi.munched

Some antics as of late - Not in order and not all pictured. It’s hard to document these things. A birthday. Croissants. Cooking well enough. Kinship. Foraging (Elderflowers, Magnolia, Cherry Blossom, Wild garlic, Fig leaf, Three cornered leek). Lots of beautiful and varied produce. Such sweet spirits. Endless popping out for endless bits I’d forgotten….SO many people pulled through to help me out during this period - Offering up their time, space, energy, creativity and much needed knowledge 🧅 by @kiwi.munched

Pretty in pink!This event celebrated @cometogether_official 2nd birthday in collaboration with @dazed . The dishes were inspired by their latest DRAMA issue and the titular quote, “Sex is the ultimate form of communication.” The brief? Soft, sensuous, playful, and camp. It was a fun challenge, and I feel really lucky to have been part of it.As always, thank you @barneypau for the trust. I also snuck in a few shots of a custom cake for @aethermagazine —it fit the color scheme too well to leave out. Feeling the itch to be in a real kitchen again—hoping to dive into more of my own projects soon. Excited for what’s next! by @kiwi.munched

This bake is a lemongrass cornmeal cookie with a plum jam, crunchy corn brittle and cured egg yolk🌽 She’s not the prettiest of cookies so trying to get decent pictures is hard! This was more of an experimental bake. I bought a variety of Damsons, Greengages and Victoria plums. This cake focuses more on aesthetics than flavour! I sought out advice from the lovely masterclass by @bayousaintcake She is a simple vanilla sponge with a lemon-thyme custard, blackberry compote and a creamy Swiss meringue buttercream. Some takeaways - Three tiers are better than two for maximum filling. She is a show-stopper, and she is sturdy (I had a cake crumble on me a few weeks back due to poor infrastructure, so I’m keen to find ways to avoid that!). Orange cake soaked in a citrus honey syrup, served with fig leaf roasted cherries. To pair, a chantilly cream flavoured with honeysuckle and kefir lime leaf syrup + a speckle of pistachio brittle - This bake is a cake for cherry season🍒The cherries really shone through as they picked up a nice woody flavour. The flavour combo would be so nice as a jam! I’m still early in my experimenting/foraging era, but the syrups were an easy way to test the waters. In honour of finding my style!A dark cocoa sponge baked with a chocolate chip cheesecake. Packed in with a malted coffee custard, and a salted vanilla and malt German buttercream to finish. Dome cakes are here to stay! I’m looking forward to experimenting more with flavours and aesthetics. My newfound curiosity does love a flower, fruit and veg combo though. Today’s bake is burnt brown sugar custard tart, a carrot and pimento cremeux and gorse oil - It is inspired by my love for gorse and hues of yellow.🌼I made this recipe a while back, but this is an updated version. It could do with some tweaking, but I am happy with it. The oil brings everything together. I want to experiment more! Despite the olive oil being quite strong, the gorse cuts through the bitter finish of it and the tart nicely. It is not particularly floral - more of a sweet note that leans into that vanilla and coconut adjacent headiness that naturally comes from the flower. 🍦🥥Life is good. I am at a crossroads, but I am appreciative for the most part. Lots of pushing myself, and it is paying off. I am trying to post more. My last post was three weeks ago. This bake was inspired by pure vibes! Lathered in a fragrant lamb honey enriched with aromatics, a whipped wild garlic ricotta (which I foraged for!!), a zesty pea and mint smash + shaved, grilled and frosted asparagus🧄I’ve not indulged in a number like this before. I wanted to make something with gorse, but the sun is holding back the true potential of the flower. Hopefully, not in 6 weeks!Some highlights too - Cute animals and random stickers. A snippet from the @hystericalcollective I was a part of…I’ll bring those pics back because they’re too good not to have on show. Today’s bake is inspired by the humble yum yum - A Brioche twist loaded with brown bread, orange and panela pastry cream - Finished with a toasted vanilla glaze, a spiced oat crumb and candied orange zest 🍊🍩I took inspiration from the humble Yum Yum, of which my only standard is the one offered at Greggs. She does the job, but my one stands before you in her elevated grace🫦 I’m still getting used to taking “good” pics of my bakes, why is it so hard?! I’ve not worked with dough before because it seems daunting. It was my first time making doughnuts, and they were super fluffy!
