Sorting isn’t glamorous. But skip it and everything after is just damage control.

Before roasting, we carefully sort the beans pulling defects, uneven ferments, anything that could compromise the end flavor.

It all started with a love for good chocolate—and a curiosity to make it ourselves.
Late nights, 48-hour melangers, and a kitchen full of cacao later… here we are.
