We teamed up with our friend @onkatiesplate to whip up a sweet + spicy fried chicken sandwich, with the crunch coming from @kooshy sourdough panko breadcrumbs + the kick coming from @zabs hot honey. Recipe below!@kooshy x @zabs Crispy Chicken Sandwich (makes 2):INGREDIENTS:2 cups @kooshy Panko Breadcrumbs2 tsp @zabs Hot Honey1 boneless skinless chicken breast1 cup pickle brine1 ½ cups buttermilk1 ½ tsp salt1 ½ tsp garlic powder1 tsp smoked paprika¾ tsp cayenne½ tsp ground mustard1 cup all purpose flour3 tbsp cornstarch2 eggs, beaten½ cup cold water3 cups canola oil2 brioche buns, cut in half and toastedPickle chipsHot Honey Mustard:2 tbsp mayo2 tsp dijon mustard2 tsp whole grain mustard2 tsp Zab’s Hot Honey½ tsp salt½ tsp black pepperINSTRUCTIONS:1. Butterfly chicken breast and cut off excess to fit bun. 2. Place the two halves of the chicken between two pieces of plastic wrap and pound with a meat mallet until even and roughly ½ inch thick.3. In a medium size bowl, combine pickle brine, buttermilk, 1 tsp salt, 1 tsp garlic powder, 1 tsp smoked paprika, and ½ tsp cayenne. Place chicken breasts in the bowl and marinate in thefridge for at least an hour.4. Set up dredging station with breadcrumbs in a shallow dish and make wet batter in a separate container by combining: flour, cornstarch, eggs, water, ½ tsp salt, ½ tsp garlic powder, ½ tsp ground mustard, and ¼ tsp cayenne.5. Remove chicken from marinade and let excess moisture drip off. Submerge in wet batter and ensure chicken is thoroughly coated. Press into breadcrumbs and place on a wire rack. Let rest in freezer for 20 minutes to set.6. Heat oil over medium heat in a dutch oven or high sided pan until it reaches 325ºF. Add chicken breasts and fry individually for about 3 mins on each side until golden brown.7. Remove from oil, place on wire rack and season with salt.Assemble your sandwich by adding hot honey mustard to the bottom bun, top with pickles, add chicken breasts and fry individually for ~3 mins on each side until golden brown.8. Remove from oil, season with salt, and assemble your sandwich. Enjoy! by @kooshy
