I’ve said before that shooting outdoors is easier — and that’s true when it comes to creativity. But this time, I was only able to photograph the starters, since mountain weather is always unpredictable. In this case, it was the wind — really strong wind… 🌪️

I really enjoyed this one. Outdoor photography is quite straightforward, but capturing good shots indoors is always a bit trickier when you’re aiming for something better.

The vision was "simple" — to blend the experience of Norway’s breathtaking nature with the delicious food at Eggen restaurant. That’s how the idea of making the table look like a natural mosaic was born.

Shooting photos at @eggenrestaurant restaurant is always a special challenge. It’s surely one of the most beautiful places I’ve been to, and likely one of the best I’ll ever see.

Through my photos, I aimed to reflect the connection with nature that defines the visit — the feeling of being immersed in Norway’s breathtaking landscape.

🌼 Handpicked Dandelion 🌼

From mountain meadows to your plate — our head chef Patrik with his team handpick wild dandelions right here in Åndalsnes and transform them into a unique dessert experience. 🍃✨

Tart with apple and our own vegan dandelion honey, dandelion sorbet made with care, white chocolate, and a touch of local bee pollen from Valldal — all crafted by our team, with nature as the guide.

This is not just a dessert.
It’s a taste of the mountain. 🌿⛰️
