Beef Tataki and Being Present

Ingredients
- 8 oz beef tenderloin, filet mignon, or your choice of thick cut beef
- 1 apple
- lemon juice to taste
- 80 mL soy sauce
- 60 mL rice vinegar
- 15 mL mirin
- 1/2 tsp hondashi
- butter for basting
- 6 cloves garlic
- sliced green onion for garnish

Directions
1. mix soy sauce, lemon juice, mirin, rice vinegar, and hondashi to prepare ponzu. May increase proportionally for more or less sauce
2. julienne apples and finely slice garlic
3. cook garlic in a cold pan on low until lightly browned, it will continue cooking off the heat
4. add beef to very hot pan and sear the entire surface, cooking until rare or medium rare (~100-120 F internal temp). Slice into thin strips and soak in ponzu. Chill in fridge
5. place a piece of apple on each beef slice. Top with fried garlic, green onion, and add excess ponzu

The perfect way to end the most impulsive summer of my life. The most beautiful city with the warmest, welcoming people I’ve ever met. I’ve only known some of y’all for 3 weeks now, but the biggest thing that’s gonna keep me going in grad school for the next 3 years is the next time we’ll meet again.
