Why we source our Matcha only from Regions within Kyoto 🍵

1. The climate.

Kyoto’s climate is very unique which gives us mineral rich soil which are perfect for growing conditions to grow naturally sweet umami Matcha.

2. Sustainable small batch farming.

This area of Japan is full of small batch farms… luckily we’ve been able to build a great relationship with one which means our quality isn’t lost.

3. The People & Methods.

The people in the smaller regions of Kyoto have kept all their traditional values including the harvesting methods has been passed down through generations. It’s more than Matcha, its tradition.

A journey that went way deeper than sourcing Matcha.

It started off as a mission. To find the best quality Matcha within a district of Japan, named Wazuka, Kyoto.

Soon after landing and going deep into the hills of Kyoto we learned that nothing in that part of the world could just be a mission: but instead, a journey.

A journey where we were taught not just about Matcha but a way of life that is so alien to how we live. A way of life which teaches you to slow down, be present and be nothing but intentional in everything you did.

There was no verbal lessons taking place on this journey - simply letting those of the district lead by example in actionable ways they would live their life.

We urge you, whether you’re sipping our matcha or taking a walk. Be present. Be intentional.

And don’t forget it’s okay to slow things down. by @kyosmatcha

So… let’s talk storing Matcha. Fridge or cupboard?

Fridge. Every time.

Matcha hates heat, light, air and moisture. Leave it in the cupboard and it loses its colour, flavour and that fresh taste much faster.

The rules:

→ Keep it sealed tight in its tin or pouch
→ Store it in the fridge once it’s open
→ Let it come to room temp before opening, so you don’t get condensation

The first cosy one of the season 🍁

hot matcha with maple + cinnamon, our autumn ritual.

you’ll need:
· 3-4g Kyo’s ceremonial matcha
· 60ml hot water (around 80°C, not boiling)
· 1 tsp maple syrup
· 200ml steamed milk (oat works best)
· a dust of cinnamon

maple in the mug → whisk your matcha until frothy → pour over the steamed milk → cinnamon on top.

As the tea harvest season in Japan begins to draw to a close, a moment of appreciation for the people behind every bowl 🇯🇵

From tending the fields throughout the year to carefully harvesting the leaves, there are countless hands, generations of knowledge and an incredible amount of work behind the matcha we drink every day.

A huge thank you to the farmers, tea field workers and producers who make what we do at Kyo’s possible…
