Yes not the traditional Christmas desserts, but they work for us. German Chocolate Cake with roasted coconut flakes, roasted pecans, home made caramel sauce and chocolate ganache. Then Strawberry Cake, with no food coloring, just fresh strawberry puree, powdered freeze-dried strawberries and vegan cream cheese frosting. Very time consuming but very, very yummy! During the next two days we say goodbye to an amazing person. Dinis, my father-in-law, lived an enviable life, though it had its share of trauma and challenges. The relationship between my father-in-law and my mother-in-law was not one of Instagram or movies, but a true love story. They were rarely ever apart and when they were he would write and send her love letters. They spent 60 years of marriage together, challenging each other and supporting each other. He was a person whose vitality was unmatched. He only stopped skinning dipping at 85 and it wasn't until he was 91 that I was able to keep up with him when going for his short 3 mile morning walks on the beach. Up until the end, my in-laws went dancing every Friday. Even in death, Dinis went on his terms. After spending 93 1/2 years healthy, his heart decided it was time. With an incredibly full life, he passed away after a heart attack at 93, 2 months shy of 94. His loss leaves us all with an unmeasurable emptiness but the memories of his vitality will help to gradually fill that void. by @ladyx321

Day 2, two hikes around the green and blue twin lakes in a dormant volcano by Sete Cidades. Morning hike around western side of lakes and afternoon hike around the northern side. Amazing views of the ocean to our left and lakes to our right. So lush and beautiful with hydrangeas everywhere. This was the morning hike. taken in Sete Cidades, Azores, Portugal by @ladyx321
