The #instabread (and other specialties) diary of an 🇮🇹 🇬🇧 amateur baker! Been baking with my beloved "Jean-Claude the starter" since 2019 #lapa_bread

Wholemeal purple wheat and Ruchmehl: what a combo!!! Never tried "Purpur Weizen Vollkorn Mehl" before and...wow: it's amazing! It's a lovely and very coarsely grinded flour, that gives the bread a super nutty and reach aroma! I am sure that Andra @sourdough_explained will appreciate the amount of wholemeal on this loaf...and the dark crust! 😉😅❤️

I totally forgotten about this one from the other week! 🙂 If my memory serves me right, this was a "Tipo2" + "Tipo0" flour. But I do remember one thing very well: it finished too soon 😅🤣 #JeanClaudeTheStarter #lapabread #sourdoughbread #instabread #pane by @lapa_bread

Today is World Bread Day and what a better way than celebrating it with this beautiful "Pane di semola"? (Tbh here is World Bread Day every day, pretty much...but still! 😅)

On this occasion, I used 100% semola flour from @molinocasillo bought from @rattonpantry and, for a change from pasta madre, I used my wholemeal rye -liquid- starter instead.

What are you baking this weekend? 😍

October is here! This can only mean one thing: #panettone season is round the corner!
As I keep maintaining my #lievito (pasta) madre in shape, it's important to put "the beast" to the test and so what a better way than baking something?
This is not a panettone, but it's still a slowly fermented enriched dough, a recipe of my dear mentor @paoletta_sersante made solely with lievito madre and candied apricots as inclusions. It was proofed overnight in my @brodandtaylor folding proofer (not an ad) and, needless to say, thoroughly enjoyed for breakfast with a cappuccino 😍❤️ I wish you could smell it through a screen, divine!
Can't wait to start baking panettone!!!

Still buzzing from last night's @brodandtaylor event hosted at @breadbreadbakery to present their newest little beauty, the revamped and improved version of their super popular "Sourdough Home" - Thanks @fabcommunicationsagency for the invite, we had a blast! 😍🎉🥂🍾 #sourdough #sourdoughbread #lapa_bread #lapabread #jeanclaudethestarter by @lapa_bread

My new (new to me) obsession has one name: #brotgewürz - a spice mix (usually caraway aniseed, fennel seed etc) often added to bread doughs in Austria and Germany, mostly (likely other countries nearby too).
Growing up in Sicily I mostly ate "pane di semola" (durum wheat bread) which, naturally, has a sweeter note in its crumb, very mild taste, sometimes with a sesame seed coating on the crust. That's our day to day bread, my comfort food when homesick. Then, I started travelling for work in Vienna and couldn't help but noticing how some bread was particularly tasty and I simply couldn't work out what it was I never managed to replicate that taste and aroma back home...until one day I spotted a little sachet of "the secret ingredient" by the till at @krusteundkrume.wien and I asked what it was used for and the reply provided intrigued me and I was like "let's try something new". Little I knew THIS was that flavour I was looking for and couldn't find... What a game changer! This is a 50% type 1600 and 50% Caputo nuvola, 1.5% brotgewürz mix. Hydro approx 82%. #sourdough #sourdoughbread #jeanclaudethestarter #lapabread by @lapa_bread

I'll be honest, it took me forever to braid this 4 strands #zopf but I think I made it in the end, right? 🤣😅 Its taste was divine, I enjoyed it with pretty much everything, from black sesame spread, to "mamma home made" strawberry jam, plain, with cheese etc. It's so so versatile! (And yummy obviously!!!) #braidedbread #zopf #lapabread #bread by @lapa_bread

Watch how these yummy #breakfast rolls are shaped! I used a #recipe from @paoletta_sersante
Disclaimer: I have found this shaping technique in here on so many profiles that I don't even know who made it first, so I cannot tag the creator unfortunately. #lapabread #lapa_bread #jeanclaudethestarter by @lapa_bread

I hardly publish reels, as I prefer photos...but since Insta seems to be thinking otherwise, then, here is a short video about the bread posted on my previous post. Enjoy! ❤️ by @lapa_bread

I've missed baking my own #bread 🥰😍🤤
#jeanclaudethestarter always delivering! Yay!

I've spent the past two weeks in #Taormina with my family...and just like that it's time to go back to London 🥺 It's always a bittersweet moment having to leave 😭...but I guess this time I managed to do it in the best way I know: making a #pizza for my parents, using my go to pizza recipe from @paoletta_sersante and the fabulous candied capers from @don_ilcanditosiciliano - I've been wanting my parents to try them for such a long time, and I finally managed to! (Grazie, Nino!) 😍🥰

#Bread content will come back soon, I promise!

Another one I've been meaning to publish in the last week or so, but failed to. 70/30 Caputo Nuvola and Austrian Einkorn.
Never a boring day at the table with such tasty bread! #sourdough #bread #artisanbread #pastamadre #lievitomadre by @lapa_bread
