Recipe:
80g oats finely ground or pre-ground oat flour
3 scoops (1.5 servings) Premier Protein Vanilla Milkshake protein powder (you can use your favorite protein powder, just adjust the macros)
2 tbsp psyllium husks finely ground (optional, added fiber)
1 tsp baking soda
1/2 tsp kosher salt
1 tbsp of your favorite sweetener, I used stevia (again, adjust macros depending on what you use)
1 tsp vanilla
1.5 servings (about 170g) 4% milk fat cottage cheese, blended (you can use 2% this is just what was available at the store this week. i like to blend it with an immersion blender in the container to use in recipes)
2 large eggs (about 100g) (you can use just egg whites, just SAY IT WITH ME adjust the macros)
1 tsp lemon juice or white vinegar
approximately 1 cup of water

DO NOT SKIP: Start preheating your pan/griddle on the stove over a low to medium-low heat. You want to let it preheat for a few minutes at least

Mix the oat flour, protein powder, baking soda, salt, and sweetener in a medium sized bowl.
In a measuring cup, mix the eggs, blended cottage cheese, and vanilla. Pour those into the dry ingredients and start mixing them all together.
Then pour about 1 cup of water into your dirty measuring cup along with the lemon juice or vinegar and whisk it until the water looks cloudy. (it just makes sure you're not missing anything stuck to the cup and makes it easier to clean later)

Start by pouring about half of the water into the pancake mix and mixing. if it's too thick, keep adding water about one tablespoon at a time, until it looks right.
the batter will continue to thicken as it sits while you're cooking the pancakes, so keep adding the water a tablespoon at a time as you go, to keep the batter the right consistency.

You'll drop about 1/4 cup of the batter onto the preheated griddle/pan and gently spread it out until it's about 5 inches in diameter

Once the pancake looks bubbly on the top and the edges are starting to lift up, gently scoot your spatula under the pancake to release it from the pan and then flip and cook for another 30seconds to 1 minute or until the middle of the pancake feels spongey and springs back
