Ingredients

* 🥑 1 medium ripe avocado
* 🥛 ½ cup (about 120 ml) skimmed milk or unsweetened almond milk
* 🌰 1 cup almond flour
* 🍫 3 teaspoons unsweetened cacao powder
* 💪 1 scoop protein powder of your choice
* 🥚 1 whole egg
* 🍫 About 15 g dark chocolate, melted
* 🌿 Stevia, to taste
* Optional: a pinch of salt and a little vanilla extract

Method

1. Preheat the oven to 185–190°C.
2. Add the avocado and milk to a blender and blend until completely smooth and creamy.
3. In a bowl, combine the almond flour, cacao powder, protein powder and stevia.
4. Pour the avocado mixture into the dry ingredients and mix well.
5. Add the whole egg and melted dark chocolate. Mix until you have a smooth, thick batter.
6. Transfer the batter to a small lined or lightly greased baking dish and spread evenly.
7. Bake at 185–190°C for approximately 25–30 minutes.
8. Allow it to cool before cutting. For an extra fudgy texture, let it cool completely before slicing.

Almond Protein Cookies

Ingredients

• Cottage cheese• 1 egg• 1 egg white• Almond extract• Zero-sugar honey-flavored syrup• 1 scoop protein powder• 1 & 1/2 cup oats• Whole almonds • Dark chocolate chunks

Recipe

Blend the cottage cheese, egg, egg white, almond extract, and zero-sugar honey syrup until smooth. Stir in the protein powder and oats to form a cookie dough. Tangerine Saffron Cake 

Ingredients

4 medium peeled tangerines
1 cup almond flour
1 scoop protein powder
1 cup oats
Stevia, or sweetener of choice
½ teaspoon baking powder
1 shot saffron water, made by steeping a small pinch of saffron in hot water and letting it sit for a few minutes
5–6 tablespoons melted coconut oil
Olive oil spray, for the baking tray

Recipe

Peel the tangerines completely and remove as much of the white pith and seeds as possible. Blend the tangerine segments until they become a smooth mixture.

In a separate bowl, combine the almond flour, protein powder, rolled oats, stevia and baking powder. Mix the dry ingredients together.

Add the blended tangerine mixture and the saffron water, then mix everything together until well combined. Add the melted coconut oil and mix again until you have a smooth, thick batter.

Lightly spray a baking tray with olive oil and pour in the mixture. Spread it evenly across the tray.

Bake at 185–190°C for approximately 30 minutes, or until the top is golden and the centre is cooked through. Allow it to cool slightly before cutting into pieces.

Ingredients

Base

* 5 Medjool dates, pitted

* 3 tablespoons rose water (or vanilla extract)
* 2–3 tablespoons coconut oil

Berry Layer

* Frozen mixed berries (about 1 cup)
* Sweetener of your choice, to taste

Chocolate Topping

* Dark chocolate, melted

Recipe

- Add the dates, walnuts, oats, cacao powder, and rose water to a food processor.
- Blend until the mixture starts to come together.
- Add the coconut oil and blend again until the mixture becomes sticky and easy to press.
- Press the mixture evenly into a dish or container to form the base.

* Sweetener of your choice
* 3 teaspoons cinnamon powder

Pumpkin Mixture

* 1 cup pumpkin purée
* ¼ cup egg whites
* ½ cup almond flour
* 2–3 tablespoons coconut oil, melted
* ⅓ cup low-fat milk or unsweetened almond milk
* dark chocolate chips

Recipe:

1. Preheat the oven to 185°C.
2. Add the oats, sweetener and cinnamon to a food processor or blender.
3. Blend until the oats become a fine, flour-like mixture.
4. In a separate bowl, combine the pumpkin purée, egg whites and almond flour.
5. Add the blended oat mixture to the pumpkin mixture and stir well.
6. Add the melted coconut oil and milk, then mix until everything is thoroughly combined and you have a smooth, thick batter.
7. Divide the batter evenly between 6 cupcake/muffin. Top them with Dark chocolate chips.
8. Bake at 185°C for approximately 25–30 minutes, or until the muffins are set and a toothpick inserted into the center comes out mostly clean.
9. Allow them to cool slightly before removing from the molds.

Recipe

Soak the dates in hot coffee until softened. Blend the coffee and dates until smooth. In a bowl, mix the almond flour, peanut butter powder, baking powder and sweetener. Add the date-coffee mixture, egg whites, coconut oil and milk, then mix into a thick batter. Fold in a few peanuts. Transfer to a lightly sprayed baking dish and bake at 185°C for about 30 minutes. Let cool slightly, then top with dark chocolate pieces.
