You should make these stuffed aubergines asap 🤤

Here’s how:

• 3 aubergines, halved and salted
• 450 g minced meat
• 225 g mushrooms, chopped
• 1 1/2 medium onion, diced
• 1 1/2 medium carrot, grated or finely diced
• 3 medium tomatoes, chopped
• 3 garlic cloves, minced
• 3tbsp red wine
• olive oil
• salt
• black pepper
• paprika
• 1tbsp sour cream

Cut the aubergines in half, salt them and let them rest before patting dry and putting in the oven to roast at 180 with a little bit of olive oil for 15-20mins, while you cook your filling.
Chop your onion, mushrooms, carrot and garlic and cook in a pan with the paprika, salt and black pepper. Deglaze the pan with a little bit of red wine.
Remove the veggies from the pan and in the same hot pan add your mince, cook until golden brown and crispy, then add the veggies back inside together with the parsley and tomato.
Take the aubergines out of the oven, scoop out the inside and add to the pan with the meat and veggies.
Cook for 10mins on low heat then transfer the filling to the aubergine skins and bake in the oven for 20mins at 180.
Make a quick sauce by scraping the bottom of your pan with a bit of water and add some sour cream to thicken up.
Plate your aubergines, putting the sauce on top, adding some yoghurt for brightness and some chopped parsley. Enjoyyy 🤍 by @leddaa.as

Travels, emotions and colours combined in the mix of life. I am so full and happy to experience, live and capture the mysterious ways of existence.

I hope you enjoy it as much as I do.
