5 years of chocolate making. Half a decade of @leeway.tools

What started as a research project turned into something that sustains me, inspires me and hopefully brings a lot of joy and connection to others.

Walking the road is more fun than reaching the destination, so I have no clue where this is going or what I’ll be doing 5 years from now, but in this moment I’m having a lot of fun and feel humbled and blessed to call this my work.

I’m doing a little celebration this Sunday 20 September at @filth.amsterdam from 18:00-23:00 would be cool to see you there 😌✌️

Custom batch of chocolates made for @thesanctuary_ams last month.

For this batch I’ve worked with foraged magnolia. I candied the petals and also infused the chocolate with magnolia.

To contrast the floral notes I added puffed amaranth which gave a hint of char and earthiness + a subtle texture.

I really loved doing this custom batch and working with the seasons to get to something quite unique which also felt quite familiar in way?

Fun fact, I do the packaging design myself aswel 💁🏻‍♀️

On April 19th, 1943, Swiss chemist Albert Hofmann made history. Not in a lab, but on a bicycle.

Hofmann had synthesized LSD-25 five years earlier at Sandoz Laboratories in Basel, Switzerland. After accidentally absorbing a small amount through his fingertips, he got his first hint of its powerful effects.

Curious, he intentionally self-administered 250 micrograms, what he thought was a conservative dose. It was actually several times the threshold amount.

As the effects intensified, he asked his lab assistant to help him get home. With wartime car restrictions in place, they rode their bicycles.

That ride became legendary.

He described waves of visual distortions, an altered sense of time, and a profound shift in consciousness, all while pedaling through Basel.

He feared he was losing his mind, but by morning he felt reborn. He would go on to call LSD his “problem child,” a substance of immense potential the world wasn’t sure how to handle.

That ride is now celebrated every April 19th as Bicycle Day.

Please do not attempt at home 🙏

Vegan (3 ingredient) Caramel 🫠

sage maple syrup, cashew butter and sea salt. in the right ratios this makes for an amazing vegan caramel.

no heating was used which means that all the nutrients in the maple syrup remain intact!

this stuffs insanely addicting 🥵
