⟡ LE FIN. was not planned. I spent years in fine kitchens across Sydney and Melbourne — Le Cordon Bleu, Opera House catering, restaurants, fine dining, and hotels. I learned to bake. I learned to care about quality. Then life changed. I came to a new city. Where a new chapter began. LE FIN. didn’t start in a kitchen. It started at a table. Sharing something I‘d made with people I began to love in a city where I was starting over. And somewhere in that, I found what I actually wanted to make. Not just good pastry.
